Mal’s Chicken Olé

Mal’s “family dinner” was AWESOME! :mrgreen:

Mal’s Chicken Olé

Serves 4

Ingredients:

  • 4 chicken breasts
  • 1.5 cups salsa
  • 1.5 tbsp Dijon mustard
  • 1 tbsp lime juice
  • Sour cream or plain yogurt

Directions:

  • Mix salsa, Dijon mustard, and lime juice in a large bowl.
  • Add chicken breasts and fully cover in marinade.
  • Allow chicken to marinade for 30 minutes in refrigerator.
  • Coat fry pan with canola or olive oil and turn heat to medium.
  • Remove chicken breasts from marinade and cook in fry pan until each side is browned.
  • Add marinade to fry pan and heat chicken breasts until they are cooked all the way through.
  • Serve chicken with dollop of sour cream (or plain yogurt) and garish with lime wedge.

Murphy helped “dad” cook dinner tonight. He was so cute hanging out in the kitchen while Mal made dinner–Murph never left Mal’s side! They’ve become really good buddies! :-D

IMG_6387The sauce was rich, thick, and tangy with a mild spiciness to it. It was especially amazing mixed with the sour cream and rice pilaf! Mmmmm!

IMG_6396When dinner was finished cooking, we sat down as a “family” at the dining room table. We enjoyed some delightful dinner conversation while eating our meals. ;-)

I had a small glass of white wine before and during dinner.

IMG_6398 For dessert, I enjoyed a scrumptious brownie. It was so incredibly rich and chewy! It was the perfect way to end such a wonderful meal! :-D

I think salsa on anything and everything is delicious! But I never thought to mix salsa with dijon mustard. Great idea, Mal!

Murphy was too cute! Helping dad make dinner :) or make sure he helped clean up any mess dad happened to drop on the floor ;) That’s what my dogs love about me cooking! Always dropping things for them to clean up for me.. haha

That chicken looks aaaamazing! I feel like mango salsa would work great in it and give it a funky (in a good way, of course) flavor. Definitely going to try this STAT!

My friends baked Duncan Hines brownies for a friend’s birthday last night, and they were chewy and delicious. However, they insisted that the Ghirardelli brand mix is above and beyond. I’m not that big a brownie snob… any dark fudge-y square tastes great to me!

That’s exactly what buster does too! hehe He sits right in the middle of the kitchen and I have to be careful I don’t trip over him. This recipe looks perfect for a quick weekday meal, yum!
