- Add chicken breasts and fully cover in marinade.
- Allow chicken to marinade for 30 minutes in refrigerator.
- Coat fry pan with canola or olive oil and turn heat to medium.
- Remove chicken breasts from marinade and cook in fry pan until each side is browned.
- Add marinade to fry pan and heat chicken breasts until they are cooked all the way through.
- Serve chicken with dollop of sour cream (or plain yogurt) and garish with lime wedge.
Murphy helped “dad” cook dinner tonight. He was so cute hanging out in the kitchen while Mal made dinner–Murph never left Mal’s side! They’ve become really good buddies!
The sauce was rich, thick, and tangy with a mild spiciness to it. It was especially amazing mixed with the sour cream and rice pilaf! Mmmmm!
When dinner was finished cooking, we sat down as a “family” at the dining room table. We enjoyed some delightful dinner conversation while eating our meals.
I had a small glass of white wine before and during dinner.
For dessert, I enjoyed a scrumptious brownie. It was so incredibly rich and chewy! It was the perfect way to end such a wonderful meal!
I’m exhausted from today, so I’m heading to bed early. Good night!

Salsa as a marinade sounds super simple and delicious
Haha Murphy was just waiting for a piece of chicken to drop!
Yummy dinner!
I think salsa on anything and everything is delicious! But I never thought to mix salsa with dijon mustard. Great idea, Mal!
That chicken looks awesome!! I might try it grilled!

That looks delicious!
You’ll have to tell Mal with thought he did a superb job on the family dinner
Jealous you are getting to bed early. Although you have to get up early to go to HW. Good luck!
Mal made an amazing dinner, might need to take my husband to cooking classes!
That chicken looks aaaamazing! I feel like mango salsa would work great in it and give it a funky (in a good way, of course) flavor. Definitely going to try this STAT!

the picture of Murphy between Mal’s legs is adorable!!
My friends baked Duncan Hines brownies for a friend’s birthday last night, and they were chewy and delicious. However, they insisted that the Ghirardelli brand mix is above and beyond. I’m not that big a brownie snob… any dark fudge-y square tastes great to me!
That looks SO yummy! I love the picture of Mal & Murphy. My dog likes to hang out in the kitchen when my husband cooks as well.
Mal’s dinner looks so good! I’ll have to give that a try.
i love that mal cooks for you! so cute

Dinner looks amazing! I’m sure Murphy was happy to pick up any scraps that fell on the floor.
Salsa and lime I’ve done but never added the dijon…interesting idea. Good job Mal!
Murphy is soooo cute. Such a daddy’s boy

Looks like Murphy has some separation issues! Either that or Mal was letting food drop! What a cute pup!

I love salsa + Greek yogurt! Who needs sour cream anymore?
Our puppy, Dickens, immediately bonded with his “Daddy”, too! It must be a guy thing.
Looks good! I love anything with salsa!
That’s exactly what buster does too! hehe He sits right in the middle of the kitchen and I have to be careful I don’t trip over him. This recipe looks perfect for a quick weekday meal, yum!
