• Pumpkin Coconut Chia Pudding & Common Running Mistakes

    Good morning and happy Sunday!

    I started my morning with a deeeelicious breakfast of Pumpkin Coconut Chia Pudding, which was inspired by the Pumpkin Protein Pie Chia Pudding from PaleOMG, and a glass of freshly pressed green juice, which was my recipe for Sweet Mint Limeade with a big handful of baby spinach. Mmm! This meal was such a nice way to start the day!

    Pumpkin Coconut Chia Pudding


    • 1.5 cups almond milk
    • ½ cup pumpkin puree
    • ½ cup shredded coconut
    • 2 heaping tablespoons almond butter
    • 1 teaspoon vanilla extract
    • 1 tbsp honey
    • 1 teaspoon pumpkin pie spice
    • ¼ cup chia seeds
    • pinch of salt


    1. In  a large resealable container, mix together ingredients until smooth.
    2. Place container in the refrigerator overnight or for at least 3+ hours.
    3. Serve cold and with your favorite toppings (i.e. sliced almonds, fresh berries, sliced banana).

    Makes 2-3 servings

    After breakfast, I hit up Whole Foods to do our grocery shopping for the week. I’m still feeling kind of blah with nausea, so I wasn’t really into meal planning, but I still managed to come up with a few meals that sounded somewhat appetizing. (Please note the nosy pug in the photo below. Haha!)

    Running is a great way to get in shape and just about everyone can do it. You don’t need access to a fancy gym, expensive equipment, or other people to do the workout. You can simply throw on your sneakers and head out the door for a run. Easy as that!

    Good morning and happy Sunday!

    I had overnight oats for breakfast, which included some chia seeds. And I’m planning to try something new with spaghetti squash this week as well as have some fresh home-made tacos tonight in honor of Cinco de Mayo.

    This morning’s breakfast was coffee (of course) and whole wheat toast with PB and Honey. I kept it lighter because I headed out for a workout not long after!

    I love chia seed pudding! Blended to a smooth consistency its even more awesome. Love it with blueberries and coconut milk or cocoa and almond butter!

    I love chia pudding! And anything with coconut I’m obsessed with, so I have to try that recipe!

    When I was a newer runner, I was definitely guilty of running through pain. I’ve learned the difference between pain and discomfort, but it definitely took learning the hard way (i.e. injuries, forced time off) to change!

    I love chia pudding! It tastes like dessert and has so many nutrients!

    One running mistake that I try to avoid is forgetting to stretch well before running. Getting an injury during a run is the worst so I try to get a good stretching routine in beforehand.

    YUM, that breakfast looks delicious!! I’ve tried chia seed pudding but it was more of a dessert so I’ll have to try a breakfast version. 🙂

    My breakfast this morning was the usual greek yogurt, granola and raspberries with home-made coffee on the side.

    I have tried chia pudding, but haven’t found a recipe I really like. This one looks tempting, because I’ve never added almond butter. That could definitely change the texture for me! Thanks for sharing! 🙂

    I’ve never tried chia pudding… it sounds interesting! I have, however, tried the recipe on the chia seed bag- where you just mix chia seeds with juice but it was kinda weird… maybe a thicker pudding texture would taste better!

    That does sound weird! Mixing with milk definitely makes the texture more pudding-y.

    Breakfast was a Luna Protein Bar… College breakfasts aren’t all that exciting unfortunately …

    I haven’t tried chia pudding! I always mean to but again, I’m in college so I don’t have access to a refrigerator.

    Salads and salads and more salads… again… college haha.

    Although I’m not a new runner, I am definitely guilty of multiple of those mistakes. I always overtrain, run through pain, and I don’t really take rest days… I’m working on it!

    I have not yet tried chia pudding, but I need to! This sounds delicious! I love adding pumpkin to my plain yogurt (which usually has chia seeds, almonds, oats, and flax in it).
    I’m doing Raw Green Organic’s 2 week detox(http://www.rawgreenorganics.com/rawjuvenate-complete-organic-detox-2-weeks-starter/), so my breakfast was the protein powder + super greens and I also added some almond milk, heaping tsp of almond butter, 1 tsp hemp seeds, and some mixed greens for more heft. It’s not a true detox, but meant to get you back to being more regular. I think I had been having too much dairy (see my usual breakfast-yogurt parfait-above). I skipped the fiber and aloe pills today because those seriously did a number on me yesterday. Has anyone else tried supplements like that before? It was a pretty crazy, um, response that my body had.

    I had two pieces of whole wheat toast with peanut butter.

    I like chia but never tried any pudding yet!

    Not 100% sure, but tonight it will be curried beef on brown rice.

    I’m not a new runner but even I got carried away and fell into the too much too soon trap. Knocked me out of running for just over a week to let myself heal. Hopefully I’ll be all good for my first half marathon in two weeks!
