How are things going with the April Cookbook Challenge? Did you make some delicious recipes this week? I sure hope so!

This past week, I made a couple of wonderful recipes (Broccoli & Cashew Cheese Quinoa Burritos + Spa Day Bircher Muesli) from The Oh She Glows Cookbook, and both of them definitely inspired me to get creative in the kitchen with a Cashew Cheese Rice Burrito with Feta, Olives & Sundried Tomatoes and my own version of the Spa Day Bircher Muesli. I love how recipes can get you thinking outside of the box to create your own special dishes with all of your favorite flavors.

Angela’s cookbook just came out last month, and I know some of you are itching to get your hands on it, so here’s your chance to win a copy of The Oh She Glows Cookbook!

  5. i recently bought the green kitchen cookbook and have a ton of recipes bookmarked. i just made the flour free banana/ coconut pancake (several times!) this week!

  6. I made Maria Speck’s artichoke tart with a polenta crust from her cookbook Ancient Grains for Modern Meals. I HIGHLY recommend this recipe!

  7. I made my mom’s bean soup recipe. It’s my favorite thing she makes since I was a kid and just got the courage to ask for the recipe! It turned out great, but not as good as mom’s.

  8. I have been trying to find recipes that feed me for a lot of days and are easy to make for post pregnancy. I made a sweet potato barley pilaf. It was delicious, but I will probably save it for days with more time!

    Just made a delicious homemade chicken salad from the Better Homes and Garden Cookbook…used plain yogurt instead of the mayo….YUM!

  10. I made roasted cabbage with garlic and lemon with red onion on top and served it with roasted tofu over top that had been marinated in balsamic, mustard, and garlic. It was out of vegan planet cookbook, and while I’m not a true vegan, it was delicious!!

  11. I made cocoa coconut chili from Eat, Drink, Be Vegan. Tastes amazing, makes a ton, and has lots of coconut (my favorite)!

  12. I made the Quick and Easy Salmon cakes from Practical Paleo….and they were DELICIOUS. I’ve always been a little afraid of salmon, but no more. Looking forward to trying out Oh, She Glows!

  13. Perhaps not a healthy eat, but I made the old fashioned cupcakes from a local bakery’s cookbook – Back in the Day Bakery. All in moderation, eh?! Thank you for the chance to win Angela’s book. She is an inspiration and I’d love to experiment with her recipes more.

  14. I made Quinoa and Edamame Salad from “Vegetarian”–I made a few modifications to make it vegan, but it is delicious and a perfect make-ahead meal, especially for the spring picnic weather!

  15. I made cottage cheese pancakes from Ambitious Kitchen – just a blog now, but she definitely should do a cookbook!

  16. This week I made Black Bean Quinoa Burgers from Vegetarian Times magazine and they were delicious! Like a vegetarian sloppy Joe!

  17. Chicken with Goat Cheese and Basil from the Barefoot Contessa’s “Back to Basics” cookbook has been one of my favorite new recipes!

  18. I made PaleOMG’s Chocolate Pudding cups…easy, sweet, and chocolaty perfection! (Not a cookbook…but the whole site is like one big cookbook!)
