Working from home is both a blessing and a curse, especially when it comes to having constant access to my kitchen. Of course, it’s great because I can whip up meals and snacks whenever I want, but my kitchen is literally steps away from my laptop, so it’s really easy for me to snack all day long. (FYI: It’s been so hot lately that I moved my “office” downstairs to where it’s a bit cooler.) On Sunday, I cooked up a bunch of healthy food, so I was able to keep myself pretty much on track. That said, here’s a look into what I ate yesterday working (mostly) from home!
5:19 AM: Iced coffee with collagen, cream, and NuNaturals Vanilla
7:01 AM: Two fried eggs on top of homemade Masa Harina corn flour English muffins with melted cheddar cheese + sautéed broccoli slaw and roasted zucchini
8:55 AM: Two Medjool dates with Justin’s Vanilla Almond Butter
11:07 AM: Cowboy Caviar Cauliflower Rice Bowl
12:42 PM: Peanut Butter and Banana Protein Smoothie
2:00 PM: Iced decaf Americano with coconut milk
4:47 PM: Veggies + Ranch dressing
6:11 PM: The Easiest Chicken Fajitas You’ll Ever Make on top of sauteed broccoli slaw (FYI: I used a bag of Trader Joe’s Fire Roasted Peppers in the fajitas and, omg, SO simple!)
7:36 PM: Peanut Butter Puffins + dark chocolate chunks (approximately 8,000 ramekins of them)
7:55 PM: Wine
