I made this super simple Vegalicious Chopped Avocado Tuna Salad for lunch the other day, and I just had to share the recipe. It only requires four ingredients, so you can whip it up in a matter of minutes. It’s also really healthy and really delicious, so it’s definitely a recipe that you’ll want to make again and again! It’s perfect as a quick lunch, dinner, or snack!
Vegalicious Chopped Avocado Tuna Salad
Serves 2:

Ingredients:
- 1 cup Trader Joe’s Healthy 8 Chopped Veggie Mix or chopped veggies of your choice
- 1 can (5 ounces albacore tuna in water)
- 1/4 cup sweet pickle relish
- 2 tbsp guacamole
- salt and pepper to taste (optional)
Directions:
- Combine ingredients in a bowl. Serve immediately. Eat alone, inside a sandwich or wrap, on top of a green salad, with crackers, cucumber slices… the options are endless! Enjoy!

Pickle relish? Now that’s unique! Definitely going to have to try this out.
SO FREAKING EASY! I have people tell me all the time they refuse to go to Trader Joe’s because they don’t want to have to go to a special store. I think if that store is available to make your life easier then go!
This sounds amazing, and looks so easy! It’s so strange because I was craving tuna salad the other day, but I can’t stand mayo. This will be the next lunch I make for sure!

It’s really funny that you posted this because I am a tuna lover and just yesterday I was trying to think up healthier ways to eat it, rather than mixed with mayo.
What you substitute for the tuna? Chicken ???
