I receive a lot of questions over here at Carrots ā€ĖœN’ Cake, so I thought it might be helpful (and fun!) to introduce a new feature called Three Questions Thursday where I respond to three questions that I’ve received from readers in the past week. So, here’s the first edition of 3QT!

For the OOIAJ, I am confused about the actual jar. Are you using a jar that you just finished or are you washing jars and re-using them as bowls?

Overnight Oats in a Jar (OOIAJ) are just regular oats, soaked overnight, in a mostly-empty nut butter jar. The oats absorb the liquid (soy milk, almond milk, water, etc.) that you add to them, so in the morning, you have a cool, mushy mess of oatmeal to enjoy. The base is typically oats, but you can also use oat bran, spelt flakes, granola, etc. in the mix. The toppingsĀ are endless, and you can add them to the jar the night before or the next morning (both ways work). I add all of my ingredients to the jar the night before, letĀ it sit in the fridge overnight, grab a spoon, and enjoy my OOIAJ the next morning. Once I’m finished, I throw away (recycle) the jar, and wait patiently for another one to get close to empty!

You haven’t talked about running very much lately. Are you still training for the Run to Remember?

Well, technically, yes. I still plan to run it this coming Sunday, but I’m nursing a knee injury, which is why I haven’t written about training much lately.

Just yesterday, I met with a coach from the Boston Running Center, who seemed really optimistic about getting me back to good health.

As you probably know, my hips are misaligned (from scoliosis), so I struggle with all sorts of imbalances when I run. My left hip is rotated forward, so when I run those muscles work much harder than the right side, so my body is all out of whack. Long story short, the coach is putting together an individualized plan for me.

I actually want to thank you guys for encouraging me to nip my injury in the bud. A number of you left comments on my running injury post suggesting that I deal with my alignment issues now, so I can continue to run for many years down the road. At first, I didn’t want to spend the money to see a specialist, but now I realize that my health (and running!) is worth it. I’ll be sure to update you guys on my progress.Ā 

Last Night’s Dinner

Can we talk about this sandwich?!? My goodness, it was amazing!!!

Ham, Egg & Cheese Panini

Makes 2 sandwiches

Ingredients:

  • 2 eggs
  • 2 egg whites (or 1/2 cup liquid egg whites)
  • Splash of milk
  • 4 thick slices challah bread
  • 8 thin slices deli honey ham
  • 2 pieces of sharp cheddar cheese
  • 1 tbsp Dijon mustard
  • 1 tbsp maple syrup
  • Salt & pepper to taste
  • Butter

Directions:

  1. In a small bowl, whisk the eggs, egg whites, and milk together.
  2. Coat a large skillet with cooking spray. Add egg mixture and cook over medium heat until eggs are completely cooked.
  3. Combine mustard and syrup, and then spread on one side of each of theĀ four slices of bread, and then butter the outsides of the sandwiches.
  4. Layer scrambled eggs, ham, and cheese inside bread slices.
  5. Cook sandwich on a prepared skillet (or panini maker) until bread is browned and cheese is melted.
  6. Cut each panini in half to serve.

Simply amazing. This is probably the best egg sandwich I have ever made. The combination of flavors and, of course, the toasted challah bread was to die for! Put this recipe on your To Make List!

After dinner, I satisfied my sweet tooth with a special treat from Foodzie. I received a Tasting Box with all sort of goodies inside as part of the Foodbuzz Featured Publisher Program. Of course, I went for the cookies first!Ā

The Traditional Alfajores are classic shortbread cookies filled with creamy dulce de leche caramel and dusted with powdered sugar. These South American treats have been described as ā€œlittle bites of heaven,ā€Ā and I definitely know why now! Holy yum! I wanted to eat them both, but I shared with Mal. He loved the cookie too!

Breakfast

There’s been some really good eatin’ in the Haupert household lately!

This morning’s breakfast was pretty awesome tooā€ā€ thanks to gift from my friend Cynthia. At Fitbloggin’ this weekend, she gave me a jar of Vermont Avalanche Peanut Butter, which is creamy peanut butter mixed with white chocolate. Oh, yes. And it’s deeeeelicious!

I added the peanut butter to toasted challah bread and then topped it with banana slices. I also drank an iced coffee with soy milk.

  2. Love the idea of 3 Questions Thursday šŸ™‚ Also love that the peanut butter is made with not just any white chocolate, but ‘Powerful White Chocolate’! I hear you on the injury frustration front; it can be hard to look at the situation with a long-term perspective but its ultimately more rewarding to treat the issue now to preserve the health of your body for the long run, and you might learn some interesting things about yourself and your relationship with running in the process.

  3. I can’t believe you used to date Jean-Ralphio! Actually, my TV boyfriend (i.e. fictional) is Ben from Parks & Rec. I love that show. Anyway, I don’t think I’ve actually met anyone famous, but I used to live in the West Village in NYC and I’d see people out and about all the time (e.g. Ben Stiller, Sarah Jessica Parker).

  4. I Just want to say I am so happy you put pb on the rest of your banana and place it on the plate next to your toast – my boyfriend and roommates make fun of me when I save the last half of banana and slather the pb (& J) on it…

  5. A few years ago, actually quite a few years ago, we saw Trish Stratus at the airport. I got her autograph (though, I have no idea where it is now). And that is the extent of my celebrity glimpses, haha.

    I once met Mark Wahlberg when I was staying in a hotel in Philly. He was shooting a movie and was staying there with his family. He’s just as hot in person but a little on the small side (about same height as me — 5’5″)!

  7. This is totally random but that photo of the Boston Running Center makes me nostalgic for Beantown – the way it sits below a brownstone. I went to BU and lived in that same kind of brownstone, and looking at the photo gives me such nostalgia! We definitely don’t have brownstones here in LA.

  8. I met Michael Jordan and Chris Noth (Mr Big) from Sex and the City. Chris wouldn’t take a picture with me, but I did get to shake his hand. I also had a friend interning for MTV one summer, and I got to hang back stage with Collin Farell and Jamie Foxx. I never actually talked to them, but I was close enough to them to be able to reach out and touch them.

  9. I bought the VT PB Company Monkey one this week. So good and is fantastic melted on banana soft serve.

    I’ve met quite a few celebs. The two most notable are Kobe Bryant and Danny Devito. Kobe went to a rival HS of mine so he was sweet but Philly hated him for not staying and playing for the 76ers. Danny Devito was a jerk. He child was attending Brown and was annoyed we wouldn’t deliver the stuff he bought from Bed Bath and Beyond. School’s policy not ours but he thought he deserved special treatment.

  10. I met Heather Headley! She’s a recording artist and broadway star, most notably she played the original Nala in The Lion King and the original Aida in Aida. She came to my high school during summer theater and did a clinic with us since she saw we had done Aida that spring and she lives in the area of my hometown. She was sweet, friendly, BEAUTIFUL, and her voice is even more amazing in person.

  11. Yep, Rachel Maddow. She’s amazing. I used to work with her life partner, Suan Mikula, so it was pretty much a given that I would eventually meet Rachel. šŸ™‚

  12. Have you thought about seeing a chiropractor? They’re amazing to align your whole body! I had scoliosis and the chiropractor fixed it right up with frequent manual adjustments. Chiropractors aren’t just for your back, the treatment makes your whole body feel like new!
