Solo Target Trip & Coffee Kettle Popcorn

I’m the owner of Carrots ‘N’ Cake as well as a Certified Nutrition Coach and Functional Diagnostic Nutrition Practitioner (FDN-P). I use macros and functional nutrition to help women find balance within their diets while achieving their body composition goals.


An in-depth, 4-week reverse dieting course for women who feel like their metabolism has slowed down, think they might have hormonal imbalance and can’t lose weight no matter what they do.

My morning (of course) started with a glass of iced coffee along with a delicious, nutritious, and satisfying breakfast of scrambled eggs, fruit salad, and toasted homemade banana bread with melted butter on top.


After breakfast, I headed to Target for my first solo shopping trip since giving birth to Q$ last week. There were a few things that we had recently run out of, but I ended up making a huge list of all sorts of household products and toiletries that we’d likely need to restock in the next few weeks.

Basically, my small shopping turned into a BIG one, but I figured we might as well buy what we need now, so we don’t have to worry about it later since I know quickie trips to Target are going to be harder to come by in the future! (The photo below is only about half of what I actually bought!)

When I got home from shopping, it was just about lunchtime, so I threw together a quick plate with leftovers from the fridge: sushi rolls, tomato-basil-mozzarella salad, and half of a steamed sweet potato.

I ate a few bites of the sweet potato and then decided that it needed some chocolate hazelnut butter because I had a serious craving for chocolate. (I also added some shredded coconut on top.)


Sweet potato + chocolate hazelnut butter = incredible!



A couple of hours later, I still had a craving for something sweet, so I broke into this month’s NatureBox, which included all sorts of delicious snacks, including coffee kettle popcorn.

Coffee kettle popcorn = out of this world! It takes salty-sweet to a whole new level with the flavor of coffee. Holy yum x one million!

  1. Last time I shopped at Target was like 3 weeks ago and it was a big trip as well!! I’m craving sweets right now as I’m having afternoon coffee. Friday night is always chill in our house as the hubs goes to Jui Jitsu and we usually just do something quick for dinner. It’s also usually movie night at home.

  2. I am at the beginning of a 14 hour shift…ugh…and still have not had lunch and can’t get away from my desk for any length of time. I am CRAVING a PB and raspberry chia jelly (you have created a monster with that recipe – your blueberry combo has been my fave so far) sandwich on whole wheat toast. Thankfully I have a well packed lunch box…if I can only slip away for a moment to toast my bread! LOL Love that onesie!

  3. I have found that everytime I enter Target I always leave $60 poorer. So my friend and I decided to say we paid admission to Target.

  4. I was at a farmer’s market last weekend and watched a guy make kettle corn in a copper kettle, and you know some came home with me. I’ve made it to almost Saturday again and I still have some left. That would not be the case with coffee kettle corn.

  5. Some salty- like pizza sounds REALLY good!
    I literally go to Target 1-2 x/week, in addition to doing online shopping. Please tell me you have the Red card. I save so much money with that thing. I also really like the Target brand cleaning supplies, veggies, etc.

  6. I am usually in Target every weekend but haven’t been in probably a month!
    My friday night is just chilling on the sofa with the dog watching Say Yes to the Dress. I’ve got a super busy weekend with 2 events each on both Saturday and Sunday.
    All of my cravings were just satisfied today. It was a string of unexpected meals…
    My boss gave me this mini unsweetened blueberry pie this morning that was perfect. Then I ended up having BBQ from a lunch meeting at work. We’re talking the best fried chicken, ribs, cole slaw and mac n cheese ever and to top it off I sampled some amazing fro-yo at a franchise expo for work. Yeah, I’m good! =)

    I enjoyed it with my 15 month old son and my Husband!

    Tonight my husband and I headed to dinner at a little French place with a good friend who has been in town for business. It was a blast!

  9. Craving cherries I got at whole foods today. I love me some Target! I have one just a few minutes away and it is dangerous! I am there ALL the time. Friday night is catching up on blogs while the kids are in bed. Tomorrow is date night! Have a good weekend.

  10. I am craving strawberries lately, which is weird because I’m typically not a strawberry fan. I guess that is what happens when you buy ridiculously delicious, in-season, home-grown strawberries at the farmers’ market. Amazing.

    I try to plan my Target trips sparingly, as we all know you walk out of Target with 3 times more than you planned. 🙂

  11. I used to go to Target all the time when I had my dog because that was the only place I could find the treats she liked. I always spent at least $100 whenever I went there. Now I only go there once in a while since my dog passed away, and it is not really that close to my house. I have found that Target has the best prices on my favorite Fage yogurt, so whenever I go there, I stock up.

  13. Good for you, I’m still not ready for a solo shopping trip yet after 2 weeks! I have that same onesie! I bought it when the gender was still unknown but she wears it anyway! I don’t know about you but breastfeeding has made my appetite insane, much bigger than when I was pregnant! How’s he sleeping at night?

  14. I last shopped at Target about three weeks ago.
    I’m wearing the cute printed shorts I bought during that shopping trip.

    Friday (last night) I was at the throwback BBQ at Government Center. Salt and Pepa performed.

    I’m craving…
    More energy so I can start cleaning.
    No food cravings today.

  15. Assuming that you are breast feeding Baby Q, was he affected by the coffee kettle popcorn, i.e. caffeine? We ran into that when my wife was nursing our son and she had anything with caffeine in it.

  16. I can’t walk out of target without spending at least $50 it’s so bad. that popcorn sounds amazing too bad its a trigger food for me, I haven’t touched it in over 3 years and its not so bad but smelling it used to drive me crazy! Craving the cherries that will be on sale tomorrow yummy!
