I never would have never guessed that a grilled asparagus sandwich would be so incredibly delicious. Holy yum! I’m now obsessed with this sandwich… in particular, this sandwich

My grilled asparagus sandwich included smokey eggplant spread, Parmesan, field greens, and balsamic vinaigrette on a baguette. The combo of flavors is out of the world!!! I’m in love! 😀

In addition to being delicious, this sandwich is a good nutritional investment: 335 calories, 6 grams of fat, 5.5 grams of fiber, and 15.5 grams of protein. I’m sort of surprised that such a healthy (and yummy) sandwich came in a package! 

Friday lunch at an outdoor cafe:

  • Grilled asparagus sandwich 
  • Stonyfield yogurt (afternoon snack)

  • Iced coffee to go (not pictured)
