Good morning!!
I’ve really enjoyed writing these weekly recaps of what I have been eating lately. They’re a lot more exciting for me, and, hopefully, you too! With that said, here’s the next edition of My Eats Lately!
Fruit, Squash, and Nut Butter Breakfast Bowl
I’ve been combining pumpkin, butternut squash, or sweet potatoes with sliced banana, fresh berries, and a big scoop of nut butter. It’s the best breakfast””nutritious and satisfying. I love eating this before a morning workout!
Greens & Beans
I actually created this recipe for Health, so I’ll be on News & Views next week. It’s a delicious mix of green veggies (Brussels sprouts, peas, chopped spinach), beans (chickpeas), and a Dijon mustard-maple dressing. Mmm! So good.
Make-Your-Own-Tacos
When I visited my sister and Matthew the other day, my mom and I brought all the fixings for chicken and black bean tacos. There’s nothing better than a good taco, right?
Holy crap, these things are so good. I made a batch on Tuesday afternoon and ate them all by Wednesday night. I frickin’ love them.
Butternut Squash with Green Apple and Bacon
Another delicious, nutritious, and satisfying meal idea! Here’s the recipe:
Ingredients:
- 2 cups frozen butternut squash
- 1 small Granny Smith apple, diced
- 1 tbsp coconut oil
- 1 tbsp honey
- 2 slices of bacon
- cinnamon to taste
Directions:
- Heat coconut oil, butternut squash, apple, cinnamon, and honey in a pan on the stovetop. Cook until butternut squash is no longer frozen and apple is lightly browned.
- Meanwhile, cook bacon (I nuked it in the microwave) and then break it into pieces.
- Put butternut squash mixture in a bowl and top with bacon.
Blue Diamond Rosemary & Black Pepper Almonds
I found these at Target the other day and just had to have them. They’re perfect when a salty craving strikes!

I’m all about the no-bake cookie recipes lately. Here’s another delicious one!
Smoked Maple Ham
This is the best deli meat I’ve ever eaten. It tastes like it was just cut from a honey-baked ham at Christmas dinner. I randomly snack on pieces throughout the day or throw it in a wrap. Delicious.
Mini Cinnamon Chocolate Chip Cheesecake
Oh, yes. I made mini cheesecakes with Cinnamon Cream Cheese Spread from The Laughing Cow, and, holy goodness, they are amazing. They don’t require any baking and come in individual-size servings, which is perfect for a little summer treat. The recipe will be on The Laughing Cow blog next week. I’ll be sure to let you guys know!

Oh your recent eats all look good! I’m excited for the recipe for the greens and beans. I love Brussels sprouts and mustard but haven’t thought abot combining the two.

I love no-bake cookies in the summer and build your own tacos is one of my family’s favorite year-round dinners. One of my younger brothers requests tacos for his birthday dinner EVERY year!
We made some meatballs last night that were pretty good. Just took a 50/50 turkey/beef combo, eggs, and a bunch of spices and baked them in the oven. Low carb and delicious!

Last night I made like a make your own mexican thing. I cooked some veggies, brown rice, refried beans, and guac. So everyone just piles whatever they want on their plate. It’s like a choose your own adventure book but with deliciousness!
I’ve been eating fresh vegetables, and whatever I can throw on the grill with minimal preparation! This gazpacho I made was delicious, and I mixed the leftovers with some rice for a quick and spicy meal!

I love make your own tacos too! So easy and delicious. Smoothies have been one of my go-to meals and snacks as well. Can’t go wrong with a healthy and refreshing snack in the dead of summer!

Wow! All you recent eats look so good! I’ve been really into Kabocha Squash with bacon lately. Well, Kabocha squash with anything to be honest. It’s so good! Also loving sweet potato with almond butter. Perfect post workout snack!
Ummm did you read my mind and make all the combinations I LOVE? Brussels sprouts and mustard are my JAM right now! I also love making sweet potatoes into a breakfast food.

I tried a smoothie: 3/4 cup almond milk, 2 TBSPS hemp protein powder, 1/5 avocado, 1/2 cup frozen blueberries, 1 TBSP coconut oil…
I like your chickpea/veggie dish. I need to find a way to make more complete meals with protein since I just can’t realistically have chicken or fish at every lunch and dinner meal. I’m just not a fan of beans and chickpeas/beans are primarily all starch versus protein. Since I’m not an athlete, I feel I don’t need all that carb, so things are …complicated 🙂
Is your bacon dinner recipe for one or two people (more? less?)? Portion sizes are beyond me and I have a tendency to over or undereat because I have no sense of my appetite and body (too digestively fumbled).
I have a spaghetti squash here that needs to be cooked up and I am dreading turning on the oven! But it must be done. I don’t want to cut the squash though (too much trouble/work), but I googled it and you can cook the squash whole (without cutting in half). Just rub in olive oil, put on pan and bake in 350 oven for about an hour. I’ll see what happens!

I love these food round ups!! It gives me so many great ideas!! Tacos are definitely the best!! And you can never go wrong with cookies 🙂
They all look good! I especially love how easy they are, I love it when lunch or dinner can be done quick and there isn’t a lot of ingredients needed!
My boyfriend thinks I am nuts, but lately I have been eating my frozen fruits straight up! Like ice cubes, but sweeter and it soooo good on really hot days!

I also tried out your “bake ahead” this week since hubs was out of town and what a difference its made! A side of sweet potato wedges with my morning egg is awesome! I also caved and tried almond milk in my coffee! OMG! yum!
Still not sure about brussel sprouts….but call me a CNC Convert!
– skin on wild sockeye salmon fillets (I LOVE oily salmon…the black skin on bottom is the best…good healthy fats!)
– brussell sprouts nuked in microwave
– avocado (one a day)
– too much fruit
– dark chocolate (1 ounce of those “bakers unsweetened squares every day/night…uh oh)
– almonds
– I have a strange craving for brown rice..not sure what that’s about…
Do you use just the canned pumpkin cold?
That pea dish looks good. Peas are something I never think to buy but I think I’ll start. Sometimes I tend to overdo veggies or hard veggies, and really I need to keep it simple with “easy” veggies (like peas) I think.
Do you like sabra hummus? Been wondering about that.

I’ve been eating a lot of spaghetti squash too. It’s so easy and perfect to eat cold!
Lately I’ve been loving…
Meals: veggie & meat stir frys, Lettuce wraps, grilled veggies (portabella, zuchinni etc.)
Snacks: cottage cheese with berries, cherries, and orange slices!
Drinks: Iced coffee, Summersbees Cider, and Ice water with lemon-lime crystal lite.
Anything cold and refreshing
I need to check out that cider! Good?
@Tina: Yes it’s delicious! I like the green apple flavour. So refreshing! They have a blackberry version too which I have yet to try.
Okay I’m definitely putting the no-bake almond joy cookies on my to-do list!

Hmm… I’m not sure. The coconut oil is kind of a key ingredient since it hardens when it gets cold. You could try to make them without, but I’m not sure how well they’d hold together.

I have eaten one of your recipes every day for breakfast this week. Sautéed bananas in coconut oil with cinnamon, blueberries, and almond butter. Yumola!

Had to add this! I’ve been looking for dairy and egg free treats (harder to find than I hoped 🙁 ), but was excited to see this. I think I might try sometime! (can actually eat the batter raw too, holy yum. (actually maybe I shouldn’t make it, ha…I’ll eat the whole bowl in 2 hours).
