Monday In Meals with Mal

Hi, guys!

I have a special edition of Monday In Meals for you. Mal is home for April vacation, so we had the opportunity to spend the day together. Here’s a recap of my eats with some adventures thrown into the mix!

Breakfast: Scrambled eggs with kale and maple chicken sausage + iced coffee mixed with Dandy Blend, collagen, and coconut creamer.

Workout: Orangetheory <— so fun!!

Post-workout: Smoothies from Green Light. We both ordered the #2 (banana, cashews, coconut oil, vanilla, coconut milk) with protein powder + greens.

We also got to try some REALLY fresh ginger shots. Boy, did they have a kick!!

Lunch: Ham and cheese sandwich (bread is from Trader Joe’s) + side salad with balsamic vinaigrette.

Snack: Veggies + hummus.

Dinner: A big salad with chicken breast and Caesar dressing.

And a glass of wine.

And a mini bunny cake from Easter.

  1. I love watching the marathon! This year my husband and I both had to work so we didn’t get to go and watch in person, bummer cause it was so nice out! But I still kept up to date online and tv.
    Also, your smoothies look amazing!
