Guys, I have your new favorite, go-to recipe for your weekly meal prep day. Introducing: Instant Pot Lemon Artichoke Shredded Chicken! And, I swear, cooking chicken doesn’t get much easier than this!
I love having a versatile source of protein in the refrigerator at all times, especially during a busy week, so I can just grab-and-go when it comes to putting together quickie lunches and effortless dinners.
This recipe for Instant Pot Lemon Artichoke Shredded Chicken only calls for 4 ingredients and comes together in not time at all. Try it on your prep day, and, I promise, it’ll become a new favorite! 🙂
Instant Pot Lemon Artichoke Shredded Chicken
- 3 pounds chicken breast
- 1 cup chicken broth or water
- 12 ounces jarred artichoke antipasto
- 1 lemon (sliced)
- salt and pepper to taste
- Place above ingredients in your instant pot. Season with salt and pepper. Seal cover, press the “Poultry” button, and set timer to 22 minutes. When finished, release stream and then take off cover. Remove chicken breasts from instant pot, place in a large container with cover, and then shred with a folk. Spoon extra sauce from instant pot over chicken, if desired.

No Instant Pot? No problem! I think this recipe would definitely work in a crockpot, but, of course, the time would need to be extended. Feel free to play around with the time and let me know how it turns out!
