Good morning! Happy Hump Day!
Breakfast
Yesterday morning started with an especially delicious breakfast. I love it when meals come out so much better than expected! I had two waffles with melt-y almond butter spread in between and warm, sweet cinnamon apples on top. So yum!
To make the apples, I just chopped up a couple, placed them in a microwave-safe bowl, drizzled honey and sprinkled cinnamon on top, and then nuked them for 90 seconds. I ended up making a good size batch, so I have leftovers for later in the week.
Once again, my morning was full of work, work, work with a 27-pound pug on my lap. I also drank some OJ as well as a decaf almond milk latte while I worked.
A little before lunchtime, I headed out to run a few errands, which included a stop at Whole Foods (obviously – I have a problem) and the post office to mail a special gift to my Secret Santa person. A group of us bloggers did a holiday gift exchange this year, so I’m excited for my person to receive their gift in the mail and, of course, see what comes in the mail for me! Oh, the holidays”¦ I love them so much!
Lunch
After running my errands, I came home and pulled all of the leftovers out of the refrigerator to make a “garbage salad.”
In the mix: mixed greens, baby spinach, tomatoes, home fries, ground turkey with taco seasoning, and crumbled feta. It was a random mix, but quite tasty!
Snack
A couple of hours later, I had a craving for something sweet and delicious (i.e. chocolate), so I made myself a mug of hot cocoa and snacked on some chocolate chip cookies. It wasn’t the healthiest or most satisfying snack, but sometimes you just need to give into your chocolate cravings!
Workout
A little while later, I headed to CrossFit for a fun running WOD. I thought you guys would like this one too, so I made it into a pin-able image!
I did the workout as prescribed (95 pounds for the deadlifts), but I was SO SLOW when it came to the running. Running is usually fairly easy for it, but it definitely kicked my butt last night. People were passing me right and left, and one guy even lapped me! Surprisingly, the deadlifts and Double Unders were the least of my worries! I finished 4 rounds in 20 minutes.
