This is such a delicious and easy meal to whip up for lunch or dinner (looking at you, Taco Tuesday!). I used gluten-free quinoa flour tortillas, but any tortillas will work. Simply toss some shrimp with olive oil and taco seasoning in the air fryer until crispy and then pile on a tortilla layered with smashed avocado, shredded purple cabbage (that crunch factor!), and a squeeze of fresh lime… a sprinkle of fresh cilantro if you have it, too!
We love this gluten-free, dairy-free, and protein-packed 15-minute meal and hope you do too. Enjoy!

Ingredients
- 1 pound cooked shrimp
- 1 Tablespoon extra virgin olive oil
- 4 tortillas
- guacamole
- taco seasoning
- shredded purple cabbage
- lime
Instructions
- Toss the shrimp with olive oil and taco seasoning.
- Cook in air fryer until crispy.
- Mash avocado with lime (or use store bought guacamole) and spread onto tortilla (warm up the tortilla first if you prefer).
- Add shrimp, shredded purple cabbage, fresh cilantro (optional), and squeeze of fresh lime – enjoy!
