My gosh has today flown by! 😯 Seriously, where do the weekends go?!?
Sometimes just one more day would make the weekend feel like a true weekend, right? Sadly, I know this isn’t possible, so I’ve found ways to better deal with the Sunday Blues. Recently, Mal and I have scheduled movie nights for Sunday evenings. Having something like this to look forward to helps us ease back into the work week instead of stressing out about Monday morning. Tonight, we’re watching The Invention of Lying. I hope it’s good!
Workout
Guys, I love running. I really do. I wish I could do more of it. There’s just something about running that is so relaxing. Plus, I always feel like a million bucks when I finish a run.
This afternoon, I ran 3 miles in 25:42 (8:38 pace) and then walked for an additional 1/2 mile to cool down. It was a nice little workout– short, sweet, and without pain. It felt great to get out there and RUN.
Lunch/Snack
After my run, I wasn’t really hungry for lunch. Breakfast did a better job holding me over than expected, so I ended up snacking on a Gala apple.
And then some Coconut Curry crackers (I’m obsessed!) and a few prunes (not pictured).
Before dinner, Mal saw a commercial on TV for a special Dairy Queen promotion: Buy 1, Get One for 25 cents. Today was the last day of the promotion, so, of course, we NEEDED to go. Mal really had to twist my arm to get me to go with him. 😉
Unfortunately, our local DQ doesn’t participate in promotions. Boo! 🙁 Mal and I were bummed, but we decided to get Blizzards anyway. I mean, we went through ALL of that trouble to drive there and wait in line! 😉
Dinner
I tried a fantastic new recipe for dinner tonight. Mal already declared it a “Go-To” recipe for our house.
The other day, I stumbled upon a delicious-sounding recipe in Runner’s World for Rocco DiSpirito’s Fettuccine Alfredo. I love Fettuccine Alfredo and I love Rocco, so I had a feeling that this recipe would be a winner!
As always, I made a few changes to the recipe: I used rigatoni instead of fettucini and nixed the cornstarch. (We didn’t have either in the house.) Even though I altered the recipe, the meal still turned out really well– pretty much just like the “real deal,” but much healthier for you.
On the side, I had a big salad topped with balsamic vinegar.
For dessert, I’m planning to eat half of my Oreo Blizzard and save the other half for another time. Portion control, baby!
