Check out my new toy!
After professing my love for tofu last week, the nice people at Nasoya sent me this neatĀ TofuXpress food press.
It’s so easy to use: just put in your block of tofu and it presses the water right out. Simple as that. I put the TofuXpress in the fridge for about 2 hours while it pressed out the water. It worked so well– much better than theĀ dishtowel method.
Look how much water this thing pressed out! So cool!
Lunch
Once I pressed the water out of my tofu, I cubed it and pan-fried it. Man, it was goooood! I can’t believe I was missing out on tofu for so long. It’s now my new best friend. š
I topped my salad with tofu chunks, baked sweet potato medallions, and balsamic vinegar. Mmm! There were so many delicious flavors in this salad! š
After lunch, I whipped up a batch of Julie’s Flourless Peanut Butter Cookies.
These babies are dangerous… like really dangerous. They only require 3 ingredients, take 10-15 minutes to bake, and are ridiculously delicious. I’ve already eaten half the batch! I guess Cookie Friday came a day early this week! š
