Hello!
Is Tuesday flying by for anyone else or is it just me? I don’t know where today has gone, but I’m glad that we’re one day closer to the weekend and the predicted 70 degree weather! š (BTW, can this frickin’ rain stop already!?! It’s ruining my fun! :evil:)
Snack
Before I left for NuVal, I snacked on a homemade granola bar that I baked this morning. I might use this recipe in my book, so I can’t share it just yet, but I can tell you that dried prunes and peanut butter were key ingredients. š So delish!
Lunch
At NuVal, I broke into my lunch around 11:30. My stomach was rumbling! I started with a salad of romaine, carrots, cucumbers, and tomatoes with a couple of leftover chickpea patties and some lemony yogurt dressing on top.
On the side, I had some leftover ground flaxseed meal + shredded coconut sweet potato fries. I love these things! I cannot wait to make another batch. Maybe tonight?

I have a pretty low-key afternoon planned followed by a Body Pump class later tonight. I’m actually really looking forward to having some downtime– well, at least until I receive my editor’s feedback on the first draft of my book. Then, I will have plenty to do! šÆ Might as well enjoy the free time while I can!
