If you have a sweet tooth, but don’t have the time or energy to make an elaborate dessert, then I have a recipe for you. This recipe rocks for a few reasons: 1) it only uses four simple ingredients that are most likely in your pantry; 2) it’s gluten-free; 3) it stores well… that is, unless you eat it all in one sitting – easy for the Haupert family to do!
This Butterscotch Chex Mix is an easy recipe to have the kiddos help make, too. Quinn can practically make this sweet and salty dessert by himself – with our supervisor, of course.
It’s the perfect thing to whip up for a family movie night or kid’s party. Anything with butterscotch, brown sugar, and butter has got to be good, right? Let me know if you give this sweet treat a try!

Ingredients
- 2 sticks of butter
- 1 cup brown sugar
- 12 ounces Rice Chex cereal
- 1 cup butterscotch morsels
Instructions
- Preheat the oven to 325 degrees F.
- Line a large baking sheet with parchment paper.
- Place butter in a microwave-safe bowl or measuring cup and melt.
- Remove butter from the microwave and combine with brown sugar.
- Place Chex in a large mixing bowl and then pour the brown sugar mixture over the Chex and fully coat.
- Pour mixture on the prepared baking sheet in an even layer and then bake for 8 minutes.
- Remove the baking sheet from the oven and then pour butterscotch morsels all over the Chex.
- Toss the Chex with a wooden spoon as the butterscotch morsels melt.
- Allow Chex to fully cool before serving.
- Try not to eat the whole batch in one sitting. 🙂
