It’s actually an oldie, but goodie recipe that I’ve made again and again over the years, and it’s one that’s always a crowd-pleaser!
This Edamame Guacamole is loaded with fresh ingredients and plenty of flavor as well as healthy fats and some protein – thanks to the edamame. Let’s just say, this guacamole is better than most, and I hope it makes its way into today’s festivities! 🙂
Easy Edamame Guacamole
- 1 ripe avocado
- 1 cup edamame (shelled)
- 1 lime (juiced)
- 2 tsp minced garlic
- 1/3 bunch of cilantro
- 1/2 cup chopped tomato
- 1/4 cup chopped onion
- Salt and pepper to taste
- Combine all ingredients in a food processor until smooth
- Serve cold with pita chips, tortilla chips, or crackers
