Remember “The Extra Mile” smoothie from Kure that I raved about the other day? Well, I (appropriately) re-named it “The Best Smoothie Ever Made” and successfully recreated it at home. Yay!
The original list of ingredients included coconut meat, but I didn’t have any on hand, and I actually wasn’t sure how it would work””bust open a coconut and shave some off? I dunno, but it sounded like a lot of work, so I swapped the coconut meat (and coconut water) for coconut cream, which worked really well. It made the smoothie incredibly creamy and added a ton of wonderful coconut flavor to it. Mmm, coconut”¦
Ingredients:
- 1/2 cup coconut cream
- 4 tbsp almond butter
- 2 cups torn kale
- 3/4 cup Silk coconut milk
- 1 tbsp honey
- 5 ice cubes
Directions: Combine ingredients in a blend until smooth.
Makes 1 serving
As you can see this isn’t a low-calorie smoothie, but, instead, it’s more of a meal in smoothie form. With protein, healthy fats, and nutritious leafy greens, it’s the perfect breakfast, lunch, or dinner, especially when it’s too hot to cook. I hope you guys love this smoothie as much as I do!
