• The Lightest, Fluffiest and Most Cake-Like Pancakes Ever

    Good morning and happy Sunday!

    Pancakes were on the menu for breakfast this morning, so Mal made his special recipe for the lightest, fluffiest, and most cake-like pancakes ever. He’s been making this recipe for years and it’s one of our very favorites. It’s super easy, totally delicious, and always turns out well. Definitely keep this recipe in mind for your next pancake breakfast!

    • 1 cup 365 Organic Buttermilk Pancake & Waffle Mix (or Bisquick)
    • 2/3 cup milk (I used almond milk)
    • 1 tbsp oil (I used canola oil)
    • 1 egg
    • 1/4 cup sour cream (Greek yogurt will work too, but sour cream is so much better!)
    • fresh blueberries (optional)

    1. Mix all ingredients together until smooth.
    2. Pour batter onto a pre-heated, lightly oiled griddle. Cook  on medium-low heat and flip ounce.
    3. Serve immediately with syrup, jam, nut butter, or fresh fruit.

    Makes 2-3 servings (six 4-inch pancakes)

    These look delicious! Pancakes are one of my favorite breakfast foods (at least on weekends) and these look really easy, fluffy, and amazing!

    Since moving to Europe we’ve started making pancakes from scratch since Bisquick etc doesn’t exist here. These look delicious though!

    My Mom has always used sour cream in her pancakes and swears it is what makes them so fluffy. I love the creamy texture it gives them.

    btw, do you know what’s up with the ads that keep taking me away from your content? i start reading a post & they take me away from the page…super annoying and sometimes I can’t get back to your blog post, and I can’t imagine it’s helping your traffic.     @Amanda: might be a virus on your computer. I don’t notice that happening and I have had that happen to me in the past and it turned out I had spam or something similar that had infected my computer.

    those look amazing! I can’t remember the last time I had a pancake. I’ve never thought to add sour cream, but I know people talk about that for cakes so I’m sure it would be awesome in pancakes! 🙂

    I just said this past weekend to the hubby that I only like blueberries when they are in a baked good or pancakes. I will definitely have to try these.
