• The Weekend {So Far}

    We’re having a really nice, but low-key weekend in the Haupert household so far.

    Last night involved PJs, watching television, and a ridiculous amount of cuddling on the couch. Our DVR was at 89%, so Mal and I were all about a TV marathon.

    Dinner

    Dinner was thrown together in a matter of minutes—thanks to a microwavable dinner.

    Macaroni & cheese + steamed spinach = delicious and somewhat nutritious!

    I finished off the evening with a mug of hot chocolate made with vanilla almond milk and topped with whipped cream. Yum!

    Apparently, I can’t get enough hot chocolate in my life because I woke up this morning thinking about it. Mal wakes up thinking about iced coffee every morning, so we took a ride in the car—with Murphy, of course—to Starbucks.

    I ordered a Salted Caramel Hot Chocolate with extra sea salt. Isn’t this a beautiful beverage? It was almost like a work of art and, man, it tasted incredible.

    Breakfast

    After our trip to Starbucks, I reheated a piece of Mushroom and Gruyere Quiche and ate it along side a Pumpkin Dark Chocolate Chip & Date Muffin (I baked them the other day) and some fresh pineapple. Mmm! Excellent breakfast!

    I had a little bit of leftover canned pumpkin in our refrigerator the other day, so I whipped up a small batch of pumpkin muffins with dark chocolate chips and chopped dates. They turned out great—here’s the recipe!

    Pumpkin Dark Chocolate Chip & Date Muffins

    Ingredients:

    • 1/2 cup all-purpose flour
    • 1/2 cup canned pumpkin
    • 1/4 cup sugar
    • 1 tsp pumpkin pie spice
    • 1/2 tsp baking powder
    • 1/4 tsp salt
    • 1 tsp vanilla extract
    • 2 tbsp butter, softened
    • 1 egg
    • 1/4 cup almond milk
    • 1/4 cup dark chocolate chips
    • 1/4 cup chopped dates

    Directions:

    1. Preheat oven to 350 degrees F.
    2. Combine all ingredients in a mixing bowl.
    3. Portion batter into 6 muffins tins or paper liners.
    4. Bake for 30-32 minutes until muffins are cooked all the way through.
    5. Allow to cool slightly and enjoy!

    Makes 6 muffins

    After breakfast, Mal and I quickly cleaned up the house. It wasn’t too bad because I did a small cleaning mid-week because the pug fur was taking over the house.

    Then, I made a batch of my Mom’s Apple Crisp for Friendsgiving. A couple of our friends are hosting a Thanksgiving dinner at their house this evening, so we’re bringing dessert.

    Of course, Murphy wasn’t far from the apple-chopping action. I gave him a few pieces because he is so darn cute.

    Snack

    In the middle of making the apple crisp, I ran out of sugar, so I took a quick trip to Whole Foods to buy some more. Of course, I came home with bacon from the hot bar (because I am an obsessed weirdo).

    Now I’m working on updating my iPhone… finally. I’m removing the 4,000+ photos to increase the memory, so I can do the update. It better be worth it!

    Hahaha, JUST plugged in the cord two seconds ago to do the software update. I’ve also been dragging my feet on it! I hear the calendar is the only negative about the update. No more little list under the date, that lists your daily activities. Booo. Maybe they’ll make an update that fixes it.

    Starbucks’ holiday drinks are amazing. Their salted caramel latte is delicious. You should try it if you haven’t already! Also, I tried your french toast breakfast scramble this morning with peanut butter and it was yummy! :)

    I’m loving my Saturday so far. We’re pretty much staying in the rest of the day, but that’s what some Saturday’s are for :)
    Your really making me want a salted caramel hot chocolate from Starbucks. I think I’m going to have to break down and get one soon.

    Wow that hot chocolate looks amazing! so far today I spent most of the morning at the gym and now I am resting. The husband and I may have a mini date night tonight after he finishes studying! Though the snow just started here and that makes me want to just curl up on the couch and stay in :)

    i usually wait a good 3 months before updating my phone. gives them time to roll through fixing all the bugs.

    i always hold my breath when i do it though. i have this awful fear of losing everything at once!

    I loved mulled wine…or non alcoholic warm apple cider! Yum! I do love the combo of chocolate caramel and salt though…amazing! Love that the muffins are nice small batch! You should try em with almond meal!

    I am also going to a Friendsgiving today, but my daughter decided to nap for more than 45 minutes (which hasn’t happened for weeks!). We’ll be a little late, but as they say, better late than never. I’m bringing sweet spicy carrots and salted oatmeal white chocolate cookies. What are you bringing to yours?

    Haha I love that the Whole Foods hot bar has bacon! I don’t know why that’s funny but it’s also brilliant. I’ve been enjoying the weekend so far—a good mix of relaxation, to-do-list things, and catching up with friends.

    Sounds like an awesome weekend! Mine has consisted of reading pages and pages of pathology and embryology. I might sneak in a run or some gym time soon.

    FYI if you do the software update via iTunes you do not need to clear the memory on your phone. I was so happy to learn that!

    I did the same thing last night with my iphone! Apparently I waked long enough the update had four updates to it. Not sure about the new look though.

    I love egg nog in my coffee when I worked at the mall, I was addicted to the egg nog lattes at Gloria jeans. I’m so glad theres dairy free egg nogs now!

    My night tonight is a pajamas and DVR kind of night. So many nights out this past week seeing shows meant I needed a little relax time for myself. I have no regrets. ha!

    I hate the new iOS! But it’s because I still have the iPhone 4. It’s too slow. It’s meant to work better with the 4s or better. Fair warning just in case you keep phones until they die like me :)

    I am totally avoiding it. Ever since I did the last update, my phone randomly shuts down apps while I’m using them and I feel like it has slowed down a lot!

    The starbucks holiday drinks are out of this world! Ps Wholefoods is one of the best places on earth!
    As for me, I went to hot yoga this morning and have plans on doing a 10 mile run tomorrow.

    I’ve been avoiding updating my iPhone like you as I’m scared of what the changes will do to it and also have been too lazy to want to ‘relearn’ how to use it again.

    I am seriously drooling over that hot chocolate you had at starbucks, it looks amazing. Whilst we have Starbucks here in Australia too they don’t offer the same drinks so we don’t have that hot chocolate here unfortunately.

    How is it already Sunday night? Another weekend has flown by…sigh! It was a great weekend and it was actually chilly here in Houston and tree are no signs of it warming up….Favorite holiday beverage…I like anything with mint or egg nog. NOM NOM!

    Loooove bacon! No shame, haha. I work weekends so mine has been just okay — but looking forward to MY days off! :) Favorite holiday beverage…I usually just do regular coffee (or a misto from Starbucks) with cinnamon added, but for awhile I really liked Egg Nog flavor coffee. I keep thinking I should buy egg nog and just use it as a creamer. And I totally avoid updating my phone too. I’m so paranoid updates will erase EVERYTHING! I ended up getting the 5S, though, and I actually like it a lot.

    I have the iPhone 4s and I’ve got to do a lot of cleaning up if I ever want to upload ios7! Favorite S-bucks drink is the gingerbread latte but your salted caramel hot chocolate looks amazing!

    Thanks a lot. :) I am now obsessed with the salted caramel hot chocolate. I couldn’t stop thinking about it after seeing your Instagram photo and I finally got it this morning. I attempted yesterday and accidentally received the Salted Caramel Mocha. Both delicious. Both addictive. Hooray!
