Hi, friends! I wanted to show you guys another favorite throw-together meal. This one I call a “meal prep salsa cauliflower rice bowl.” It’s just 4 ingredients, nutritious, delicious, and super simple to make! 🙂 Really, I think you’ll want to add this meal to your regular rotation! 🙂
So, the first ingredient in this meal prep salsa cauliflower rice bowl is cauliflower rice – you can use fresh or frozen. I typically use frozen just for the convenience. I actually just leave the bag in the fridge overnight to defrost and then pop the cauliflower rice in the microwave to heat up when ready. Then, I typically use ground turkey for the protein source, but you can use ground chicken or ground beef, whatever you like. Ground turkey just happened to be what was organic and on sale at the grocery store. The next ingredient is jarred salsa. I like the Trader Joe’s brand as well as their cowboy caviar, which has corn and beans in it, but you can use any type of salsa you like. You can even get crazy and use pineapple or mango or something fun like that! And, finally, I add a scoop of pre-made guacamole. Of course, you can use regular avocado or make your own guacamole from scratch. I’m just making life simple with the store-bought stuff!

This salsa cauliflower rice bowl is definitely a great meal prep recipe. If you have your cauliflower rice and ground meat ready to go, you can just grab it from the fridge and reheat before you add the salsa and guacamole to your bowl. Easy as that!
Mal really likes this recipe as well, but he doesn’t love cauliflower rice, so I’ll mix regular rice with it or just give him white rice with the ground meat, salsa, and guacamole. If you’re not a huge cauliflower rice fan, totally feel free to mix it with white or brown rice or nix it all together. You could even use broccoli rice or another favorite riced veggie.
I hope you guys try this throw-together meal! There’s a lot of different flavor variations, and it’s really so easy to make. This sounds and looks great! I LOVE cauliflower rice – it’s so versatile and flavorful and an excellent alternative to traditional rice.
I have never tried cauliflower rice. It sounds interesting.
I am always looking for new ingredients for my meals.
It can get so boring eating the same things all the time.
I like the way that you offer various ingredients in case you don’t like one of them.
Most recipes don’t offer you alternative ingredients.
I also like the fact that it can be prepared in advance so you don’t have to rush around in the morning trying to find something for lunch.
Most people just opt for unhealthy meals and then they wonder why they are putting on weight.
