Lunch
Yesterday’s lunch was a couple of leftovers from the fridge: Whole Foods Sonoma chicken salad + loaded mashed potatoes. Yum!
I finished off lunch with the last bit of my Mom’s Apple Crisp. I can’t have this stuff in the house without wanting to eat every last bite!
Snack
Mid-afternoon, I did a little baking. Hello, chocolate chip cookies! Recipe coming soon!
Dinner
Dinner was so cheesy! We had Parmesan Crusted Chicken and scalloped red potatoes made with Gruyere cheese.
For the Parmesan Crusted Chicken, I reduced the mayo by half and added garlic powder and black pepper, and it turned out so well. I will definitely make this recipe again. The scalloped potatoes were incredible, and I also want to make them again ASAP!

Recently, I attended the Runner’s World Festival & Half Marathon where I had the opportunity to hear keynote speaker, Dave McGillivray, director of the Boston Marathon and running philanthropist, talk about some of his accomplishments.
His presentation, titled “Defining Moments,” could have easily been a chance for him to brag about his life achievements, but McGillivray is an incredibly humble person and used it as a teaching opportunity. Even still, I left his talk totally in awe of what he’s done with his life and feeling even more inspired to make some positive changes in my own. That said, here are a few pieces of wisdom and life lessons I took away from his presentation.
