I heard a rumor that you guys like quick and easy meal ideas, so here are four delicious ones that you might enjoy. I hope they inspire some tasty meals in your house!
1. Half of a baked sweet potato with chicken salad, steamed spinach, and buffalo sauce
This meal requires a little Sunday prep, but once you’ve done your cooking for the week, you can throw this meal together in just a few minutes. (Sunday meal prep: Bake sweet potatoes and cook chicken breast. Extra credit: Make chicken salad.) To make this meal, fill a medium bowl (like one you’d eat cereal out of) with fresh (or frozen) spinach, put half of a baked sweet potato right on top, and then nuke the whole thing for 60-90 seconds. Meanwhile, cut up chicken and mix with mayo to make chicken salad. When the spinach and sweet potato are warm, top them with chicken salad and buffalo sauce. Dinner done!
2. Prosciutto and leafy greens pizza
Besides the pizza crust, everything else was already in our kitchen, so I just threw together this pizza in no time at all. Pretty much any fresh or frozen veggie would work on top and the prosciutto has a pretty long sell by date, so you could easily keep some on hand for when you want to whip up a quick pizza.
3. Baked mac & cheese with broccoli (or chopped spinach or kale or cauliflower or another favorite veggie)
This Baked Mac & Cheese recipe is the bomb! It seriously takes no time to make and if you throw in some frozen broccoli florets (or another frozen veggie), it makes it a semi-healthy, comfort food meal!
4. Chopped salad with canned tuna, buffalo sauce, and blue cheese crumbles
Sadly, I don’t have a photo of this meal, but it was so darn good, I just had to share it. Here’s how to make it: Open and drain a can of tuna, mix with buffalo sauce (tip: a little goes a long way), chop up some iceberg lettuce, like you would for a chopped salad (tiny pieces), mix it all together, and then top with blue cheese crumbles. Ooooh my goodness, it was delicious and it took me about 5 minutes to make.
