Hi, friends! I hope you had a wonderful weekend! I spent mine in Maine with Mal and a bunch of our friends. We rented a house on Old Orchard Beach, so everyone stayed over and celebrated Mal’s 30th birthday with two days of uninterrupted fun. (I plan to blog about it later, so stayed tuned!)
On the drive home from Maine this afternoon, Mal and I meal planned in the car.
Here’s this week’s menu:
- Sunday: Turkey sandwiches on Paleo Bread with kale chips
- Monday: Cobb Salads
- Tuesday: Lettuce wraps with chicken, avocado, and peanut sauce
- Wednesday: Israeli couscous with sausage, walnuts, and Brussels sprouts
- Thursday: Out-of-town
- Friday: Out-of-town
- Saturday: Out-of-town

Your lettuce wraps sound so good. My Dad makes amazing lettuce wraps with mince meat.. out of this world! Will have to post the recipe 🙂 Thanks for the inspiration!
