After breakfast this morning, Mal and I drove home from Vermont. Our weekend at Twin Farms was absolutely amazing. It was honestly one of the nicest places we’ve ever stayed. I took almost 300 photos while there, and I seriously can’t wait to tell you guys all about it. Epic weekend.

Once Mal and I unpacked and got settled at home, I headed out to do our grocery shopping for the week. I did my shopping at Trader Joe’s because we were out of almond flour and they sell it super cheap. I also overestimated the portions/leftovers from a couple of our meals from last week, so I ended up “bumping” them to this week, which meant we already had most of the ingredients in our kitchen, so I didn’t need to do a large shopping.

With that said, here’s this week’s grocery shopping and meal plan:

  • Sunday: Slow Cooker Philly Cheesesteaks
  • Monday: Sweet Potato Enchiladas <— I froze leftovers from last week’s dinner
  • Tuesday: Leftover Sweet Potato Enchiladas
  • Wednesday: Teriyaki-Glazed Salmon with Brussels sprouts
  • Thursday: Leftover Teriyaki-Glazed Salmon with Brussels sprouts
  • Friday: TJ’s Gyoza Potstickers and Chicken Fried Rice
  • Saturday: Out to dinner/wing in

Trader Joe's grocery shopping

Trader Joe’s was crazy-busy this afternoon, so I got in and out of there as quickly as possible. Even still, I managed to spot this jar of deliciousness and add it to my shopping cart:

A bunch of bloggers have raved about this “Speculoos Cookie Butter” on their blogs, so I am excited to see what it’s all about. Cookies + nut butter? Umm, yes.

  1. All time easy-peasy Paleo recipe– Avocado Tuna Boats. Also enjoy the crunch of munch of delicious nuts. We love to roast our own to ensure we get all the healthy oils we need! Would love the Slow Cooker Recipe book to squeeze in some more family time at the end of a busy day during the week. Thanks for all you do!

  2. Yumm. My friend recently got me to try some cookie butter, Biscoff. Its so good, it tastes like crushed up graham crackers. This gingerbread kind sounds awesome too. One thing I discovered from reading blogs is all of the different kinds of delicious Peanut Butter Co. flavors.

  3. Most recently, I’ve discovered PB2, and I love it! It’s been a worthwhile investment purchasing those 6 jars (I rarely buy food in bulk..)

    Other than that, I discovered spaghetti squash on here 🙂 and I adore substituting it for pasta. In fact, I’m ready to buy another one this week!

    I’ve also discovered a great many ways to use quinoa that I wouldn’t have come up with on my own (i.e. as a savory breakfast topped with avocado, salsa, & a dippy egg!)

  4. Sweet potato and black bean enchiladas sound delicious, maybe for next week’s meal plan at my house.
    I remember years ago when I was brand new to reading blogs I discovered… greek yogurt! Ha! And now I eat it every day and preach its awesomeness to my coworkers.

  5. Do you always stick to your meal plan? I find that my boyfriend and I try to plan meals, but we end up changing them all the time. Any tips on how to keep to a plan?

  6. “What delicious food product(s) have you discovered from reading blogs?” Hmm…. that jar of TJ’s Speculoos Cookie Butter looks really good. I don’t go to TJ’s much but that looks like something to try. Love your meal plan too. Sweet Potato Enchiladas caught my eye.
