Mmm! DELICIOUS breakfast this morning!
These Cinnamon Brown Sugar Pancakes are equally delicious and satisfying. The protein from the Oikos and eggs and the fiber from the oats and apples filled me up and kept me full for hours. And the combination of sweet honey Oikos, brown sugar, and cinnamon provided the perfect flavors for a cool, crisp autumn morning breakfast.
I woke up with the sun this morning, but instead of shooting out of bed to start my day, I relaxed and daydreamed about breakfast! Oh, the mind of a food blogger!
I recently received an email from the Stonyfield folks about their new sweepstakes– just for bloggers:

Here’s my submission for the Stonyfield Oikos contest:
Cinnamon Brown Sugar Pancakes
Makes 6 pancakes
Ingredients:
- 1 cup Old Fashion oats
- 6 oz. Oikos honey yogurt
- 1/2 cup all-purpose flour
- 2 eggs
- 2 tbsp canola oil
- 2 tbsp brown sugar
- 1 tsp cinnamon
- 2 tsp vanilla extract
- 1 tsp baking powder
Directions:
- Combine all ingredients in a large mixing bowl and blend well.
- Heat a skillet on medium-low heat and coat with cooking spray.
- Use a 1/4 cup measuring cup to portion the batter in the pan.
- Cook each side of the pancake for about 2 minutes and flip.
- Serve warm with cinnamon-brown sugar apples.
I’m off to the dog park with the boys!

Those look SO delicious, I hope you win!
I tested these out along with a boxed healthy brand and these won out hands down. I added blueberries to the batter. Oh… I forgot the flour and they turned out great – whoops… I used a sugar free maple syrup for our topping but big hit with the family! They also enjoyed scrambled eggs and sausage but for me just the pancakes. Great post!
I was just wondering if you would be able to sub. in Wheat flour instead of all purpose? Just wondering if the ratios would be the same?? Thank you!
