Good morning!!
So, it’s another one of THOSE weekends when I have a million things going on!
Saturday:
- Baking, breakfast, blogging
- Cleaning
- Yoga
- Gym
- Shower
- Hasting Pudding show
- Dinner in Harvard Square
- Meet up with friends
Sunday:
- Ras 5K
- St. Patty’s/South Boston activities
- Grocery shopping
- Other Sunday errands
- Yoga
- Sunday night blues
Early Morning Baking
I woke up with the itch to bake this morning. (I know, I’m weird! 😉 ) I had a huge can of leftover pumpkin sitting in the fridge, which is always such a delicious and nutritious baking addition, so I made a batch of Pumpkin Oatmeal Raisin Bars.
I mostly followed my original recipe, but made the following changes:
- Instead of 1/2 cup, I used 1/4 cup of canola oil
- I used 1 egg, instead of 2
- I added 1/2 cup of canned pumpkin
- I used 1 tsp of cinnamon
- I added a shake of nutmeg and pumpkin seeds to the top of the bars
The Pumpkin Oatmeal Raisin Bars turned out wonderful, but I prefer the original recipe— I think the extra canola oil adds to their yumminess.
In addition to my Pumpkin Oatmeal Bar for breakfast, I also had some Stonyfield plain yogurt with Peanut Butter Puffins.
And hot coffee with agave nectar and chocolate soy milk…

Friday Night
I was a lazy blogger last night. 😳 I barely took any photos, but here’s a quick recap of the evening:
- After work, I went to Happy Hour with my coworkers. I drank two beers and munched on a few French fries.
- Next, I headed downtown for a friend’s 30th birthday. At the bar, I drank another beer, but I wasn’t feeling the bar scene. At 9:30, I headed home (like the old lady that I am) and went straight to bed.
