Happy birthday to my wonderful, amazing, and handsome husband! Mal turns 31 today!
I don’t want to embarrass Mal with sappy a post (I’ve done that before), so I’ll just say he’s my best friend and the greatest partner I could ever ask for. We also have A LOT of fun together.
While I was away at Canyon Ranch, he actually changed the background of my computer to a photo of the skull. HA! He’s a clever one, but I have a master plan to get him back. Mwhahaha!
I read online that the best mate for a Gemini (Mal) is another Gemini (me) because only people like us can understand our quirkiness and unpredictability. The Gemini symbol is The Twins, so Geminis are often known for their dual personality. When asked how he and his wife Dolores, a Gemini, remained married for decades, Bob Hope, also a Gemini, replied: “All four of us get along great.” Murphy is also a Gemini, so I always say: “All six of us get along great.” Ha!
Breakfast
I woke up bright and early this morning to make Mal his favorite breakfast for his birthday: OMG Pancakes. He loves them! I do too!

I love granola, especially homemade granola. This one combines sweet and salty flavors, including shredded coconut, maple syrup, almonds, dried cranberries, and sea salt, which will keep your taste buds guessing.
It’s also really easy to make. You just need to mix together the ingredients in a large bowl, spread on a baking sheet, and cook in the oven. Easy as that! And the recipe makes a big batch, which will last you all week.
This granola is a wonderful addition to yogurt, fruit, or even just to enjoy plain. It’s also gluten free!
