Breakfast

This morning’s breakfast was de-lic-ious. I actually made a version of it last night for dessert, so when I woke up this morning, it was pretty much the first thing I thought about. It’s sliced banana with a mixture of Greek yogurt, coconut cream, shredded coconut, honey, and vanilla extract on top, but, holy goodness, it’s amazing—sweet, thick, and creamy with lots of satisfying protein and fat. Love. It.

Sweet Coconut Cream Yogurt with Sliced Banana

Ingredients:

  • 1 large banana (TWSS, obv)
  • 1/4 cup Greek yogurt
  • 2 tbsp coconut cream
  • 1/4 tsp honey
  • 1/8 tsp vanilla extract

Directions:

  1. Slice banana and place it into a bowl.
  2. Combine Greek yogurt, coconut cream, honey, and vanilla extract in a separate bowl until smooth.
  3. Top banana with mixture and eat!

Question of the Day

Do you like chili? If so, what’s your favorite recipe?

Do you know what a “zerbert” is? If not, here’s an explanation.

I gave Murphy a zerbert last night and he totally spazzed out! Haha!

Chili is one of my favourite meals for winter! My favourite version is my sweet potato, black bean, and turkey chili.

I made a pot of chili tonight for dinner in honor of the food holiday. It was definitely an improvised recipe, but I used Mama Pea’s drop biscuit recipe for the topping–delicious!

I had no idea it was National Chili Day! And coincidentally I made chili today. :-) I LOVE Brittany’s, from A Healthy Slice of Life, Lentil Chili….definitely worth trying some day! Enjoy!

I love happy accidents like eating chili tonight for dinner and seeing this post! My absolute favorite chili recipe is Chocolate Chili from Well Fed by Melissa Joulwan. She also has it on her site theclothesmakethegirl.com

Our six year old daughter fights with her dad over the leftovers. Pretty cute.
