Last night’s dinner was de-lic-ious! And it was SO easy to make! Ok, well, everything you see on CNC is easy to make, but this recipe was especially easy. And delicious! Did I say that already? Ok, you really should just make it! 😉
Ingredients:
- 3 chicken breasts (~1.5 lbs)
- 1 tbsp minced garlic
- 1 tsp garlic powder
- 1/4 cup lemon juice
- 2 tbsp olive oil
- 1/4 tsp salt
- 1/4 tsp pepper
- 2 tbsp minced cilantro
Directions:
Combine all ingredients in a large Tupperware container or plastic bag and mix/shake to coat chicken.
Allow to marinate 3-4 hours.
Bake on 375 degrees F for approximately 30 minutes or until chicken is cooked all the way through. Enjoy!
Dinner
I served the chicken with roasted broccoli and brown rice last night. Fabulous dinner. The chicken had strong flavors of both lemon and garlic. Mmm!
I ate dinner pretty early in the evening, so I ended up getting hungry right before bed and snacked on some peanuts.
