Lunch

I tried something new for lunch today. I had a small zucchini and a yellow squash that needed to be eaten ASAP, so I made them into squash fries– sort of like my sweet potato fries.

Here’s a quick tutorial: chop zucchini/squash into “fries,” put in Tupperware container, add 1 tbsp olive oil, 2 tbsp ground flaxseed meal, 1 tbsp whole flaxseeds, and salt + pepper to taste.

Put on cover and shake like crazy.

Spread fries on baking sheet and then bake for 20-25 minutes on 475*F.

My squash fries turned out really well. They were sort of crispy on the outside, but still soft and “squashy” on the inside. I really liked the grainy texture and flaxseeds on the outside.

To go with my “fries,” I made a couple of dipping sauces: pesto + sour cream and buffalo sauce + Four Cheese Rosa sauce.

Both dipping sauces were pretty good, but (not surprisingly) I preferred the one with buffalo sauce. ;-)

In honor of Cookie Friday, I attempted a new cookie recipe, but it totally bombed. :-? These cookies were edible, but nothing special. Boo.

I also added a Siggi’s yogurt to lunch for some extra protein.

A little while after lunch, I snacked on a pear. Now, I am hungry again.

Squash fries? That is genius. I’ve already become addicted recently to carrot, parsnip, and sweet potato fries thanks to the blog-world. Now I have another healthy variation to add to the ever-growing list! Thank you for sharing the recipe!

Tina, niiiice organization :) I particulary liked the pens/pencils in the old marinara sauce jar. I use those jars as flower vases sometimes and am getting ready to use another to hold my cotton balls ha. BODY PUMP 73 is HARD esp. the lunges and squats…OUCH.
