Success!
My desk is clean, organized, and ready for work! I even dusted it!

Hi, Murphy!

I did a couple of “arts & crafts” projects while cleaning.

This scrap-paper holder is the bottom of an old thank you card box.

Spick.

And span.

I even organized the shelf in the office. I was en fuego!

Lunch
I tried something new for lunch today. I had a small zucchini and a yellow squash that needed to be eaten ASAP, so I made them into squash fries– sort of like my sweet potato fries.
Here’s a quick tutorial: chop zucchini/squash into “fries,” put in Tupperware container, add 1 tbsp olive oil, 2 tbsp ground flaxseed meal, 1 tbsp whole flaxseeds, and salt + pepper to taste.

Put on cover and shake like crazy.

Spread fries on baking sheet and then bake for 20-25 minutes on 475*F.

My squash fries turned out really well. They were sort of crispy on the outside, but still soft and “squashy” on the inside. I really liked the grainy texture and flaxseeds on the outside.

To go with my “fries,” I made a couple of dipping sauces: pesto + sour cream and buffalo sauce + Four Cheese Rosa sauce.

Both dipping sauces were pretty good, but (not surprisingly) I preferred the one with buffalo sauce.

In honor of Cookie Friday, I attempted a new cookie recipe, but it totally bombed.
These cookies were edible, but nothing special. Boo.

I also added a Siggi’s yogurt to lunch for some extra protein.

A little while after lunch, I snacked on a pear. Now, I am hungry again.

Despite all the great products on there, I actually really do need the skillet you’re giving away–my roommate totally wrecked the one I have now so I’m currently skillet-less…
Congrats, Katie!! Please email me with your full name and mailing address to claim your prize.

I still need to finish packing for my trip tomorrow. I feel so unprepared! I need to get my act together ASAP!
I’m meeting Julie at the Body Pump 73 launch tonight. I’m so excited to meet her in person. Hopefully, BP 73 doesn’t scare her– I’ve heard it’s really tough!

Wow! Way to go on the cleaning. I love your office – it has so many cute touches! Your lunch sounds delicious and is very creative. Hope your bodypump class went well tonight and I can’t wait to read about your Pillsbury BakeOff experience!
Squash fries? That is genius. I’ve already become addicted recently to carrot, parsnip, and sweet potato fries thanks to the blog-world. Now I have another healthy variation to add to the ever-growing list! Thank you for sharing the recipe!
Maybe this post will inspire me to clean up my office area….I hope anyways!!! I love the sign that is in the background of one of the pics, the one that says, I love you blogs and coffee… I NEED THAT!!! Where did you get it?? Thanks

Your desk is adorable!
Tina- where did you get that gorgeous desk? I want a new black desk to match the rest of my bedroom furniture!
You’re just a busy lady today. I like the modern desk area.
Wow I really want to try those fries! Great idea and way to not be afraid to try something new.
Your desk organization is inspirational. How do you archive old documents? I need a better way than “pile in box”

Great job! Have a fab time at the bake off. Here’s a winner for zucchini I made yesterday http://www.epicurious.com/recipes/food/views/Turkish-Zucchini-Pancakes-1208.
Sorry, that link did not work. Just search epicurious for Turkish zucchini pancakes.
I just love newly cleaned spaces! It’s so refreshing!
WOW – your zucchini and squash fries look yum!
I love the squash fries idea – yum! I notice you eat a fair amount of flax. This doesn’t upset your stomach at all? Just curious : )

@Hillary [Nutrition Nut on the Run]: No, never. Should it?
Tina, niiiice organization
I particulary liked the pens/pencils in the old marinara sauce jar. I use those jars as flower vases sometimes and am getting ready to use another to hold my cotton balls ha. BODY PUMP 73 is HARD esp. the lunges and squats…OUCH.
