Happy Hump Day, folks!
So, I got a little creative in the kitchen this morning. I gave an old favorite a new twist by adding some new and different ingredients to it. My recipe brainchild was inspired by Kath’s Oatmeal Pancake Recipe, which is an oldie, but goodie!

Wheatberry & Flax Oatmeal Pancake
Makes 1
Ingredients:
- 1/4 cup oats
- 1/4 cup wheatberries
- 2 tbsp ground flaxseed meal
- 1/4 cup egg whites
- 1 tsp baking powder
- 1 tsp vanilla extract
- 1/4 tsp cinnamon
Directions:
- Combine all ingredients in a small bowl
- Preheat a skillet, spray with non-stick spray, and pour batter in while shaping it into a “pancake” with a spoon
- Heat for 3-5 minutes until ready to flip and then heat other side until cooked through
- Top with syrup, peanut butter, fresh fruit, etc.

I topped my oatmeal pancake with “hippy butter” and maple syrup.

On the side, I had some green grapes.

And an iced coffee with vanilla soy milk.

It was a delicious breakfast! YUM! It was also very filling… and HUGE! Let’s hope it hold me over until lunchtime.

Hehe, my favourite blogworld recipe is one of yours! One of your oat bars, I can’t remember the exact name – but it has a ‘skinny’ version…I did the proper one the other day and they were AMAZING! My mum prettymuch finished the batch single handedly though, she loves them
green monsters or roasting vegetables. never did either until i started blogging.
My favorite product from the blog world would have to have come from you: Barney Butter!
That pancake looks very interesting but delicious! I am new to blogging so the recipes are just beginning…:)
that pancake looks delicious! I make a variation of your typical breakfast with some of the things in my pantry. Bob’s Red Mill 7 grain cereal w/ banana, flaxseed, cinnamon, and walnuts!
That sounds delicious!!! Can’t believe that I still have not tried Kath’s pancakes, need to get on that!
My favorite is not a recipe per say but it’s the Green Monster. I would have NEVER thought of that without the blog world!
I don’t think anyone posted a link: http://greenmonstermovement.com/
There are so many recipes out there!!!
I think one of my favorite recipes is Heather’s Twice baked acorn squash.
I love finding recipes from blogs – it is great to search for new ideas…
Its not really a recipe but I love the idea of adding things to my oats and using regular oats instead of instant. They are a blank palate now for my breakfasts instead of boring same old, same old.
I don’t know if I’m crazy, but your nut butter on the pancakes makes me think of waves in the ocean. Maybe I’m just missing Australia and it’s beaches!
I have a squillion blog recipes bookmarked for when I get home and have a kitchen again… I bet they’ll all be my favourite when I’m in the middle of eating them!
That pancake looks so wholesome and delicious! Your posts have been having green grapes lately and it is making me crave them! They are definitely one of my favourite fruits. Obviously oatmeal is a favourite recipe from the blog world. I liked it before but now seeing the topping ideas (and the idea of using rolled oats instead of instant) has changed my world! haha
Another favourite recipe I tried was Pioneer Woman’s spicy chicken pasta with peppers. It was delicious and had a kick! Although not quite sure how healthy it was
It’s okay to splurge sometimes, right!?
Deelish. I try to avoid while flour when possible, so this is a helpful recipe for me. Thank you!
Hm…favorite recipe from the blog world….Averie from Love Veggies and Yoga has some awesome raw dessert recipes that I’ve tried. I made her turtles and pb cups for Xmas presents this year and got a fantastic response…

I love Green Monsters. I don’t know how I ever lived without them.
The pancakes look great!
My favorite recipe isn’t the healthiest choice, but its well worth the indulgence. It’s hazelnut blondies courtesy of Martha Stewart via Bake or Break (http://www.bakeorbreak.com/2008/02/hazelnut-blondies/). Nutella is my ultimate indulgence so what can be better with blondies that have a hint of hazelnut and a dollop on top? And I know that my roommates, all 6 of them, would agree. These things disappear before I can even get them out of the oven!
The pancake looks delicious and a nice alternative to oatmeal. I’m going to try this sometime, thanks!
Actually, my favorite blog recipe is probably the chocolate chip banana bread cookie recipe that you posted the other day! I tried it with and without the coconut. Next time, I will probably stick with the recipe exactly because the coconut took it up a notch!
So good! That pancake looks awesome! I’d have to go shopping for some ingredients before making that though!
Mmmm! I love this White Bean & Garlic “Salad” from Iowa Girl Eats–soooooo super yummy!

I really like this salad that my friend Natalie recently posted on her blog – it’s sooooooo delish. Great for summer!

Oh man I can’t believe no one has given fitnessista’s breakfast cookie any love- that is my new favorite breakfast because when I wake up in the morning it is ready for me and I don’t have to do a thing.
kath’s whipped banana oatmeal changed the way I thought about healthy food!
Currently drinking one of my favorites-green monster smoothie. ANother favorite is Iowa girl eats homemade burrito bowls! http://iowagirleats.com/recipes/dinner-recipes/
i’ve learned a lot of great things from the blog world, but my fave by far is the microwave pumpkin pie:

Where can one buy wheatberries? Whole Foods?
I’ve found so many great recipes and ideas through blogging. Some of my favorites as of late are:
Kristen’s Cherry Chocolate Bomb http://kristensraw.blogspot.com/2010/02/raw-vegan-recipe-video-cherry-chocolate.html and Jenn’s Humbecue http://eatingbender.com/recipes/humbecue-salmon-salad/
Both are definitely worth trying!!
I had never heard of green monsters before blogging.. now I eat them nearly every day.
I think the best thing I’ve learned to make from blogs are green monsters, hand down. I don’t know what I did before them… Ok, I’m being dramatic ;P but I really do love ‘em.

Oh, my favorite recipe that I’ve found on a blog is Santa Fe Crockpot Chicken. Super easy to throw together in the morning, ready when I get home, super healthy, and BOTH the husband and I love it! I make it about once a week. Here’s the link: http://www.skinnytaste.com/2009/02/crock-pot-santa-fe-chicken-425-pts.html
Where’s the calorie & other nutritional information?
Looks Delicious! one day I will make pancakes.
Do you cook the oats before you add them to the mix or do you add all the dry ingredients together and throw them onto the pan??
@Jessica: Check out the directions above!
