Peanut Buttery Bars

Holy peanut butter!

These soft and chewy bars are jam-packed with peanut buttery flavor. They’re also a tad on sweet side thanks to a healthy portion of agave nectar. The old fashioned oats give the bars a nice, thick texture.

The best part about these Peanut Buttery Bars is that they only require 5 ingredients (chocolate chips optional) and take just 20 minutes to make- start to finish.

Makes 12 bars

Ingredients:

  • 1.5 cups old fashioned oats
  • 1/2 all-purpose flour
  • 1/2 cup agave nectar
  • 1 egg
  • 1/2 cup smooth peanut butter
  • 1/2 cup chocolate chips (optional)

Directions:

  • Preheat oven to 350*F degrees. Spray 8-inch square baking pan with non-stick cooking spray.
  • In a large mixing bowl, combine ingredients until smooth.
  • Spread batter in prepared baking pan, and bake for approximately 15-18 minutes until the top of the bars begin to brown.
  • Let bars cool completely in pan before cutting.

Each bar has approximately 137 calories (without chocolate chips).

So easy – who would have an exuse NOT to make these? They look delicious too! I’ll have to try them out!

Do you think WW pastry flour could be used instead of AP? I typically don’t buy white flour since I rarely use any type of flour at all, but I don’t want to mess these guys up!

I’m so excited for this recipe. I’m going to replace the all-purpose flour with ww pastry flour, and it will be a perfect treat that will comply with my Cleaner Life challenge. I’m totally making these this weekend (sans the choc chips)! :)

These bars are great!!! although we made a decision that they must be cut in only 9 pieces instead of 12…and i used Naturally Nutty Almond butter!! Yum… I made a double batch and my husband took them in to
our employees … lots of unknowing people are snackin healthy today because of you and me thanks ;-)

I have these in the oven right now and they smell wonderful! I realized I was out of eggs so I had to use half of a banana. So, I suppose mine are vegan now! I also used ww pastry flour. I am looking forward to baking some more for an upcoming office luncheon.

Now I have to run back home from where I’m at and grab my agave nectar! LOL Wonder if WalMart carries it? I’ve never looked there. Hmmm? Definitely going to make these! How did I miss this post originally? Must have been sleepin! LOL

I made these tonight and didn’t use the agave nectar – not a fan of sweet things… My bars completely crumbled when I went to cut them – is this because I didn’t use the agave? Any ideas on something else I can use to make them stick? I salvaged the “bars” and crumbled it all up to make peanut butter granola. All measured out into 1/4 cup servings and stored in baggies in the freezer now.

I made these today. I used Muesli (I dont have any oats at home) and used egg replacer (my son is allergic) and they turned out great. I wanted to say Agave Nectar (is very like honey only not quite as sticky or as sweet) is found in health food shops but you can use a good runny honey in its place if you like. Thanks for this recipe.

@Vicki Thomas: I omitted agave nectar, too! I think that the liquid element of them binds them together; maybe you could double the egg, or use honey instead? The next time I make these I’m replacing with pancake syrup ;)
