I used to make Oatmeal Pancakes all of the time, including pumpkin, blueberry, strawberry, and sweet potato varieties. An Oatmeal Pancake doesn’t take that much more time to make than a pot of oats, and I remember them holding me over until lunch without a problem.Ā They’re delicious and satisfying– I wonder why I stopped making them?Ā I guess this meal needs to be back in my breakfast rotation again!Ā
Oatmeal Pancake
Recipe from Katheats.com
Ingredients:
1/3 cup oatsĀ
1/3 cup liquid egg whitesĀ
1/2 tsp baking powder
1/2 tsp vanilla extract
Cinnamon to taste
Toppings to taste
Optional: 1/2 a mashed banana or 1/4 cup canned pumpkin, squash or mashed sweet potato
Directions:
- Mix together oats and egg whites with baking powder, vanilla extract and cinnamon in a bowl. Optional: add half a mashed banana or other ingredients to the batter.
- Preheat a skillet, spray with non-stick spray, and pour your batter in while shaping it into a large disc “pancake” with a spoon.
- Heat until partially cooked and flip pancake.
- Once cooked through, top with syrup, peanut butter, canned pumpkin, fresh fruit or banana slices.
One pancake is approximately 150 calories.
In addition to a lovely oatmeal pancake topped with Barney Butter and raisins, breakfast included watermelon, a dark chocolate Adora disk, and iced coffee with agave nectar and milk.Ā
Favorite Workouts
As you may know, I am obsessed with Body Pump! It’s my favorite workout of all time! š Even though Healthworks recently started to offer the class at some of their locations, it’s just not easy for me to attend Body Pump on a regular basis. However, back in the day (aka before I started the blog), I used to do my own version of Body Pump at home with set of weights and a DVD of a similar workout. (As far as I know, Body Pump DVDs don’t exist. Although, you can find videos of classes on YouTube.) I sort of forgot about my at-home Body Pump workouts until the other day. We have no room in our apartment to store a set of weight, but somehow I’m going to make it work! I need Body Pump in my life again! I miss it!Ā
