Don’t you hate it when you plan a meal in your head only to realize that you are missing a crucial ingredient– such asĀ cheese! I was planning to make a homemade pizza for dinner tonight, but it’s really tough to make one without cheese! šæ I’m not one to get bent out of shape about something like this. I’m also not one to run to the grocery store to buy what I need. Instead, I took this opportunity to get creative in the kitchen and improviseĀ with the ingredients we already had in our apartment. Surprisingly, dinner turned out quite well! š
The “secret ingredient” for tonight’s pizza was feta-walnut filling, leftover from the Feta-Walnut Stuffed Cucumbers that I made the other day. I love being creative with food and hate seeing it go to waste, so feta-walnut spread was the perfect ingredient for anĀ improvisationalĀ pizza.Ā
While chopping veggies for the pizza, I snacked on raw green peppers and broccoli dipped into the feta-walnut spread. Surprisingly, the feta-walnut filling makes a delicious, full-flavored dip.Ā

Ingredients:
- Pizza crust (I used a Boboli crust)
- Feta-Walnut filling
- Green pepper
- Broccoli
- Onion
- Crumbled fetaĀ
How to:
- Spread a layer of feta-walnut filling on top of a pizza crust.Ā
- Top with fresh veggies. I chose green peppers, broccoli, and onions.Ā
- Top pizza with as much (or as little) feta as you desire.Ā
I love feta, so I loaded-up the pizza with it. Doesn’t it look like this poor, little piece of broccoli got stuck in a feta snow storm!? š What’s your favorite type of cheese?
- Bake for 15 minutes on 450*F or until edges of crust begin to brown.Ā
- Allow pizza to cool, cut into slices, and enjoy warm (or cold).Ā
Initially, I served myself one slice of pizza, but I later went back for a second piece. It was just SO GOOD! Feta-rific!
Mal and I ate dinner in front of the TV while catching up with our DVR episodes. Btw, Mal LOVED this pizza! He raved about it through mouthfuls of pizza! š
