Feta-Walnut Stuffed Cucumbers

I first experienced Mollie Katzen’s Feta-Walnut Stuffed Cucumbers when I met her at a cooking demo a few weeks ago, and I’ve been thinking about them ever since!

These Feta-Walnut Stuffed Cucumbers are the perfect summer appetizer– light and crisp, flavorful and unforgettable! The salty feta mixes nicely with the flavor of slightly bitter walnuts and cool, refreshing cucumber. Every bite is exciting! :-D

I would love to share this recipe with everyone, but I can’t just post Mollie’s recipes on the internet. However, I didn’t want to leave you guys hanging, so here’s an adapted recipe from Prevention.com: Feta-Walnut Stuffed Cucumbers. This recipe is pretty close to the original, but if you want the real one, you’ll just have to buy Mollie’s book: The Vegetables that I Can’t Live Without! It’s easily my FAVORITE cookbook! :mrgreen:
