You ask for pumpkin cookies, you get pumpkin cookies!
Pumpkin Spice Cookies
Makes 8 cookies
Ingredients:
- 1 cup spelt flour
- 1 cup canned pumpkin
- 4 tbsp softened butter
- 1/2 cup packed brown sugar
- 1/4 cup ground flaxseed meal
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp ginger
- 1/2 cup walnuts
- 1/2 cup raisins
Directions:
- Preheat oven to 325*F.
- Combine all ingredients in a large bowl and mix well.
- Grease a baking sheet and portion dough into 8 large cookies.
- Bake for 25-30 minutes until cookies start to light brown.
- Allow to cool and enjoy!
If I had to give these cookies a grade, I’d give them a big, fat A. The only thing that would get them an A+ is a thick layer of cream cheese frosting on top! š These babies taste just like a pumpkin muffin top with a hearty mix of walnuts and raisins. I’m a big fan.

Maybe your blog can bring attention to some of the organizations mentioned since your blog is soo popular, and obviously your readers are animal lovers considering how popular Murphy is.

Wow, I just made them and they are a success. I have a ton of pumpkin to use up and a good cup goes into these :D. I made them in my mini cupcake pan though and they are super cute and super tasty. Yum. I have a feeling these will not last long.
It’s like you read my mind the day you posted this! I had been looking up recipes online for pumpkin cookies that morning! I have a batch of these cookies in the oven right now, and if the batter is anything to judge them by, they’ll be pretty tasty. I also made some vanilla buttercream frosting to add to ’em as well.
