Mastermind Weekend 1/16

I'm Tina

I’m the owner of Carrots ‘N’ Cake as well as a Certified Nutrition Coach and Functional Diagnostic Nutrition Practitioner (FDN-P). I use macros and functional nutrition to help women find balance within their diets while achieving their body composition goals.


An in-depth, 4-week reverse dieting course for women who feel like their metabolism has slowed down, think they might have hormonal imbalance and can’t lose weight no matter what they do.

After spending 30+ hours in a van, sleeping in my own bed never felt so good. (Taking a shower and wearing clean clothes were also pretty awesome!) I slept like a baby last night!

Monica spent the night at my house, so when we woke up this morning, we decided to start our day off on the right foot with Marylou’s iced coffee. Our legs were a little stiff and sore from the relay, so we loosened them up by walking 1.5 miles each way to Marylou’s.


I ordered the Mudslide flavor, which is a mix of two different kinds of iced coffees. Monica asked which two iced coffee flavors went into it, but the Marylou’s employee wouldn’t tell her. Bummer. I liked this flavor a lot, but Peanut Butter Wonderful is still my favorite.

Back at my house, I whipped up a batch of OMG Pancakes! for breakfast. I topped mine with Justin’s honey almond butter, which is insanely delicious (if you didn’t know already).

After breakfast, Monica and I dillydallied around the house, chatted with Mal, and then did some blogging. Eventually, we started to get hungry again, so we headed to Whole Foods to hit up the salad bar. We made our salads and then took them home to eat outside on my back porch.

Of course, Murphy wasn’t far from the (food) action.

After we finished lunch, we took Murphy for a walk around the neighborhood. We only walked for about 30 minutes before Murphy decided it was “too hot for pugs” and refused to walk any farther. He laid down in some shade under a tree for a few minutes before he got up and started walking again. I didn’t want him to overheat, so we cut the walk short and headed home.

Soon after our walk, Monica packed up her things and I drove her to the airport. It was sad to say goodbye, but I’ll see her again in Seattle in just a few weeks.


Before dinner, I started to get a little bit hungry so I snacked on a lemon flax NRG Bar and a couple of handfuls of mixed nuts to hold me over.

Avocado hamburgers were originally planned for tonight’s dinner, but our avocados were hard as a rock, so I whipped up a savory almond butter spread to top our burgers with. (Mal is trying to eat a more Zone-like diet, so he wanted to add some healthy fats to our meal and this is what I came up with. It turned out surprisingly well!) On the side, we had roasted Brussels sprouts.

To make the savory almond butter spread, I mixed together 1 tablespoon of almond butter, 1 tbsp of mayonnaise, 1/4 tsp of Worcestershire sauce, and 1/2 cup of chopped onion. It sounds kind of weird, but I swear it tasted delicious.
