I’m the owner of Carrots ‘N’ Cake as well as a Certified Nutrition Coach and Functional Diagnostic Nutrition Practitioner (FDN-P). I use macros and functional nutrition to help women find balance within their diets while achieving their body composition goals.

I’m sure you probably know what S word I’m referring to– enough with the snow already! 👿

I went into NuVal for a few hours this afternoon. I typically work from home, so it was nice to interact with someone other than my dog. Although, Murphy is really great company. He’s Carrots ‘N’ Cake’s first employee! 😉 Murphy’s new favorite spot while I work is on my chair behind me, which is much more comfortable than on my lap!

For lunch, I packed leftover Fig Pizza and Stonyfield yogurt with fresh blueberries and raspberries mixed in.

When I got home, I immediately broke into a batch of Salt & Vinegar Chickpeas. I probably ate about half of the container. I was starving and they are the best snack ever.

I used the soaking method to make these chickpeas, which is definitely more cost-effective, but much more work than the canned variety. Once this bag is gone, I’ll probably stick to the canned variety.

A little while later, I finished off a bag of Goji Ginger Walnut Cookies.

I first opened the bag on Saturday night, but still”¦ I can’t believe I ate all of them in less than 48 hours! I couldn’t help myself! They’re wicked good!

  2. Aghhh sorry to hear about your snow! Murphy looks horrified by it haha! It’s rainy here today (but reasonably warm – for Ontario!).. although I hear there’s a bit of snow in the forecast tomorrow. I thought I’d seen the end of my winter jacket!

  3. it’s nice to have a dog on your lap but sometimes it gets really annoying when you’re trying to work eh?
    After I dog sat my sister’s 4lb puppy who spent a lot of time on my lap, my 25lb dog would start crying to be picked up and put on my lap too while I worked! She got a little jealous of her puppy cousin I think 😉

  4. Hopefully the weather in Missouri will come and visit you soon … it’s 78 and sunny, truly spring weather! (However, we are supposed to get rain and storms tomorrow, so I guess I’ll enjoy it while it lasts!)

  5. I wish my dog was still small enough to sit behind me in my chair…now he either just steals my chair or sleeps under my desk. But dogs are the best employees!!

  6. My puggle sits in my desk chair the same way. I don’t know how it’s comfortable for him (he’s always lopping off the sides) but he seems to like it!


  7. I know, the snow is ridiculous!!

    Sometimes I soak my own chickpeas, but I like the canned WAY more… they taste so much better and are just easier! I have made the salt n vinegar chickpeas both ways (canned & dried/soaked) and they tasted weird when I made them with soaked chickpeas… def sticking to the canned!

  8. Roasted chickpeas are extremely addictive! It is nice to get out and interact with people too sometimes. Since we work from home, we try to meet up with our artist friends on a weekly basis for a lunch. That way we don’t lose all social skills!

  9. If we got snow today, I’d cry. It’s bad enough to have rain!

    I love that Murphy is your first employee. I bet he works for biscuits too 🙂

  10. The one thing I buy that many people make their own or from scratch is canned beans. For 99 cents a can, I realize i could get triple that or more if I bought and soaked my own beans, but at some point, my time is worth more than 33 cents type thing 🙂

  11. Your fig pizza looks so good…I can imagine why you were starving when you got home though! Does the indulging via portion control method ever backfire on you? I know that I have to eat healthy, bulkier foods for lunch instead of smaller portions of the good stuff (e.g. pizza) or else I will be RAVENOUS an hour later and end up eating more food…

  12. I totally agree with you about the canned beans, I try to think about them as being cheaper than meat! Wanted to thank you for your iced coffee tutorial. I used to be a Diet Coke every day girl (as in multiple bottles), but phased it out of my life and have been trying to get used to coffee in the morning. I was having a hard time though because hot beverages just aren’t my thing. The iced coffee has been fantastic! Thank you again!

  13. I’m totally ready for summer. I just got back to Portland after a week playing in the sun in Tucson. I am sick of the rain and gray! SUNSHINE!

  14. We had sleet and rain this morning! Not very springlike in my opinion. I hope it starts warming up soon!

    Those chickpeas look so good! I need to try making them. They seem like the perfect snack! 🙂

  15. Wait so does Murphy sit literally behind you when you’re on the chair? so you are perching on the end? hahaha, doesn’t that compeltely defeat the purpose of your chair-hunt with Mal and sitting in every chair in the store?! 😉

  16. We got about 4 inches of snow last night with more on the way. I live in Jackson Wyoming and our winters are “wicked” long. 🙂 I decided to go skiing today and saw a moose and a fox, it totally made my day!! At least you don’t have several feet of snow still on the ground like we do. It’s par for the course when you live here. We say the season’s in Jackson are: winter, still winter, road construction season, and winter again. Why would anyone want to live here? The amazing Teton mountain range and the abundant wildlife.

  17. When you use the dry beans/soak method… do you cook/boil them in water and then follow the recipe to cook them in the vinegar or do you just soak and then cook them in the vinegar. I just bought dry beans this week and I am excited to try these.
