You guys have seen that show The Best Thing I Ever Ate, right? Well, last night’s dinner might just be one of the best things I have ever ate. For real.
Dinner
Last night’s dinner was Sweet Potato Quesadillas. Oooh, yes, it was.
Ingredients: a whole wheat wrap, mashed Sweet Potato Wedges, black beans, Laughing Cow cheese, and fresh or frozen chopped spinach or kale.
Directions: Spread mashed sweet potato over half of the wrap, add beans, cheese, and chopped kale, fold over wrap, and then press quesadilla in a panini press until cheese is fully melted. Allow to cool slightly and then cut into four pieces. Eat and enjoy!

Mal also really loved this dinner. After taking his first bite of Sweet Potato Quesadilla, he simply said: “amazing.” I totally agree.
We’re out of sweet potatoes, but I’m seriously thinking about taking a trip to the grocery store just to buy them so I can make a Sweet Potato Quesadilla for dinner again tonight. I’m telling ya, it was that delicious! Oh, yea, and super simple to make. I love that too!
After dinner, I enjoyed a little sweet treat of dried peaches, almonds, and white chocolate chips.
Breakfast
Mal was in the mood for pancakes this morning, so I whipped up a batch of OMG Pancakes for the two of us. I added Teddie Peanut Butter and fresh blueberries to mine.

I couldn’t name just one, so I made a list:
- Red Onion Sandwich (obviously)
- Mike & Patty’s Grilled Banana Sandwich
- Chocolate Bread Pudding from Sonsie
- Pear-fect Grilled Cheese that I ate in Seattle a couple of weeks ago
- Funfetti Cake Pop from Mix Bakery
It’s kind of funny that 3 out of the 5 things I thought of were sandwiches. I guess I’m a bigger sandwich fan that I thought I was!

I made a sweet potato quesadilla yesterday after reading about it here – it is DIVINE. I was so excited to have extras to make another one today. Yum! I made a few small changes…didn’t have kale on hand, so I subbed fresh spinach. I didn’t make the fries, so just threw a sweet potato in the microwave, then just mashed it up (I’ll add some of your seasonings to the potato next time to give it more flavor!). I had some cilantro, so threw that in too. Sooooo good – thanks for the great recipe!
