Iโ€™m the owner of Carrots โ€˜Nโ€™ Cake as well as a Certified Nutrition Coach and Functional Diagnostic Nutrition Practitioner (FDN-P). I use macros and functional nutrition to help women find balance within their diets while achieving their body composition goals.

This morning, Mal offered to buy me breakfast, so I suggested a new diner (for us) called for Uncle Charlies.

The vibe and food at Uncle Charlies were pretty standard of a diner in the area–ย homey, cozy, and a little old-fashioned.ย It was no Wheelhouse, but Mal and I were very happy with our experience.

As always, we started with a round of iced coffees with milk.

To eat, I ordered two eggs with home fries and raisin toast. I guess you could say it was โ€หœmy usual’ diner breakfast.

The eggs and the toast were greatโ€โ€just how I like โ€หœem! But, I have to admit that the home fries at the Wheelhouse Diner are a lot better. The potatoes for the home fries are cut fresh everyday at the Wheelhouse and have tons of onions and garlic in them. Uncle Charlies home fries are probably the frozen variety, but they add onions, bacon, and spices to theirs, so they’re quite tasty.

Clearly, we were satisfied customers.

NuVal News

I try not to get too NuVal-y on CNC (I like to save it for Trading Up Downtown), but I just had to share this news.

Last week, my NuVal boss sent an article from the Mankato Free Press with a story about Monte Meyer, a Pastor at Minnestor State University and Hy-Vee customer, who has lost 277 pounds. Monte credits his success to a three-part plan that includes nutrition, exercise, and accountability. NuVal is included in the nutrition component!

My colleague, Melissa, who writes A Better Bag of Groceries, was able to track down Monte and interview him over the telephone. Please take a moment to read Monte’s inspirational story, and if you feel compelled, leave him a comment. He says that the support of others really helps him on his journey. He still has 96 pounds to go!



  1. I’ve been enjoying visiting different diners while on vacation in Florida this weekend. We don’t have anything like that where I live — DC is big on ‘nice’ brunch places, not down-home diners — and it’s a fun change of pace.

  2. That’s so great that this guy used NuVal in his goal to live healthier. It just goes to show that there is no quick-fix for losing weight – it’s all about making healthier choices. Happy sunday!

  4. I love a nice inspirational story – so uplifting! Your breakfast looks great. I’m terrible at going to try new restaurants; I tend to find ones I like and stick with them but I probably miss out on a lot. I just don’t want to be disappointed when I’m paying for food!

  8. Try asking Uncle Charlie’s to cook your homefries well done. My fiance and I have that issue in some of the diners we (rarely) frequent. It makes them a lot tastier ๐Ÿ™‚

  9. I love going to diner’s for breakfast! Large chains can never compete with the family feel of a small diner…. especially for breakfast! Plus, I love supporting small businesses as well! I am off to read the Monte Meyer story now… it sounds so inspiring!

    And Mankato always makes me think of Little House on The Prairie.

  12. That diner meal looks great! I wish we had small local diners around here…or maybe we do and I just don’t know where they are ๐Ÿ™‚ Going out to breakfast is the best meal to do with a baby and it’s been too long!

  14. Kitchy little diners like that are adorable, but for some reason I can’t remember the last one I went to! I know there’s one right by the gym…maybe next weekend I’ll go early in the AM before a workout!

  15. I think if you ever said you’d found a better diner than Wheelhouse, or one you loved more, we’d have to wonder if the apocalypse was coming! ๐Ÿ˜‰

  16. I always find it fun to compare home fries at different restaurants and diners. It’s crazy how they can vary so much! I still can’t find any that blow me away though..I’ll have to try out the Wheelhouse Diner next time I am out east!
