I'm Tina

I’m the owner of Carrots ‘N’ Cake as well as a Certified Nutrition Coach and Functional Diagnostic Nutrition Practitioner (FDN-P). I use macros and functional nutrition to help women find balance within their diets while achieving their body composition goals.


An in-depth, 4-week reverse dieting course for women who feel like their metabolism has slowed down, think they might have hormonal imbalance and can’t lose weight no matter what they do.

The sun is shinning in Seattle right now, but when I woke up this morning, it was gray and rainy. The weather didn’t make for great running weather, but I knew a run along the water with Monica would start my day off on the right foot, so I got up, got dressed, and got going.

Before we headed out, Monica and I shared a banana coconut Pure bar. It reminded me a lot of the banana bread Larabar, but with a hint of coconut flavor. Yum.

Monica and I ran the same route as we did yesterday””along the water on a running path.

At the beginning of our run, it started to sprinkle, so I worried it was going to be a long, wet run, but, thankfully, it stopped and we enjoyed a nice (semi-chilly) 5.5 miles.

After our run, we went in search of iced coffee. We tried to stop by Monorail Espresso (a reader recommendation), but, sadly, it was closed. Bummer. So we walked back toward the hotel and hoped we’d stumble upon another coffee joint. Two minutes later, we found Specialty’s.

Specialty’s didn’t sell iced coffee, so I ordered an iced Americano and added milk and cinnamon to it.

It was still a little too bitter for my liking, so I added a packet of cinnamon-flavored agave, which sweetened it right up and added a nice cinnamon-y flavor to it. (The various samples are from Wholesome Sweeteners, who are at the conference.)

Once we were ready for the day, Monica and I headed to breakfast at the conference. Once again, it was a delicious spread of nutritious and delicious foods.

Maybe I was thirsty from my morning run, but I was all about the fresh fruit.

I also had a piece of crustless tomato-basil quiche, muesli with cashew butter, and tangerine juice. All delicious.

Once I finished my plate, I went back for half of a French toast bagel. Gotta get ”˜em while I can!

  1. If you have Panera, they have cinnamon toast bagels which look very similar to the French toast ones you’re loving on at the conference. In fact, they have some of the best bagels ever (but I’ve never been to New York, so ymmv). I’m jealous you’re in Seattle and at the conference. Glad you’re having a great time!

  2. Oh lord, you and Monica have been killing me with these posts lately. The food looks so good! Haha, I’m a tad jealous! Hope it’s as fun as it looks though 🙂

  3. Fresh fruit is the best after a long run! I have never tried cashew butter, does it taste sweet? Whenever I eat cashews I get a hint of sweetness from them. I have tried the coconut Pure Bar’s they are amazing. I like pure bars better than larabars. I don’t know why. Have a good day at the conference! 🙂

    1. The cashew butter wasn’t really sweet at all. It actually didn’t have a super strong flavor at all– maybe it was just the brand?

  4. Ahh! You went to Specialty’s!! I’ve never had their coffee (too bad it wasn’t the best of experiences) but they have some of the most LEGIT COOKIES I’ve ever had!

    Additionally! If you are in Seattle and looking for a cute little bakery for morning coffee/breakfast treats, I would highly recommend Macrina (it’s right in the heart of Belltown)… oh, I’m so jealous you’re there! Seattle is my absolute favorite city in the continental United States!
