Good morning! Happy Monday! How was your weekend? I hope it was fun! I’m definitely still recovering from boozing face + Fight Gone Bad + 10K race. Holy moly.


I started my morning with something new and different: Pumpkin Spice Breakfast Couscous.

I had some leftover couscous from last night’s dinner, so I turned it into breakfast. The end result was mushy bowl of pumpkin goodness. The texture was sort of like oat bran, but a tad thicker with chopped walnuts throughout for a nice crunch.

Pumpkin Spice Breakfast Couscous


  • 1/4 cup cooked couscous
  • 1/4 cup canned pumpkin
  • 1/2 cup liquid egg whites
  • 1/2 cup almond milk
  • 1/4 cup chopped walnuts
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp vanilla extract
  • 1 tbsp ground flaxseed meal 

Directions: Combine all ingredients in a pot on the stovetop. Turn heat to medium-high and cook, stirring frequently, until mixture thickens, approximately 5 minutes. Remove from heat and enjoy!

Serves 1

For dessert: cookies from 5 East Main. Mal bought me a half dozen as a celebratory post-race treat when we were in Cohasset yesterday for the 10K. Best husband ever! Of course, I shared with him.

I enjoyed a Chocolate Chocolate Chip Cookie and a Ginger Cookie last night. Mmm! I’m saving my Chocolate Chip Cookie for later today.

    Couscous for breakfast? Great way to use leftovers! Except I usually cook mine in chicken/vegetable stock for flavor when I make it for dinner. Not sure that would pair well with cinnamon and almond milk in the morning…happy Monday!

  3. YUM! I want those cookies…so sweet of Mal! I love uing leftover grains from dinner in breakfast. Im gluten-free right now, so I couldn’t do the couscous, but I made a pretty tasty bowl on the weekend using cream of rice mixed with quinoa flakes, and stirring in some cooked quinoa/amaranth at the end…love the added texture!

  4. do you think this breakfast would work with quinoa? I have some of that leftover i need to use up, was thinking about it for breakfast tomorrow…
