Oven-Roasted Tomatoes & V-Day Love

Mastermind Weekend 1/16

Hey there!

I'm Tina

I’m the owner of Carrots ‘N’ Cake as well as a Certified Nutrition Coach and Functional Diagnostic Nutrition Practitioner (FDN-P). I use macros and functional nutrition to help women find balance within their diets while achieving their body composition goals.

An in-depth, 4-week reverse dieting course for women who feel like their metabolism has slowed down, think they might have hormonal imbalance and can’t lose weight no matter what they do.

I can’t remember the last time that I had oven-roasted tomatoes. It’s probably been years, but man, are they delicious!

In my fridge, I had a wrinkly tomato that needed to be eaten ASAP (it was now or never!), so oven-roasted tomatoes were the perfect option.

Oven-Roasted Tomatoes

Medium tomatoes, sliced crosswise
Olive oil
Salt & pepper

  • Preheat oven to 400*F
  • Line baking sheet with aluminum foil; coat lightly with cooking spray
  • Arrange tomato slices on prepared baking sheet; cut end facing up.
  • Sprinkle tomato slices with salt and pepper. (I also used a little garlic salt.)
  • Roast until the tomatoes shrivel slightly and the edges start to brown, approximately 30 minutes.
  • Top with fresh shredded Parmesan (optional).

For dinner, I also ate the final slice of my veggie quesadilla from Border

This piece was super-duper cheesy!

And, dessert was two Almond Butter Chocolate Chip Olive Oil Muffins and a handful of M&M’s. My chocolate cravings were intense tonight!

Tea Love

Waiting in my mailbox this evening was lots of yummy tea! Both Sarah of Tales of Expansion and Yogi Tea sent me some fun and interesting flavors: Sugar Cookie, Berry Detox, Mexican Sweet Chili, and Green Tea Pomegranate. I can’t wait to try them all! 😀

Homemade Love

Mal and I also received a homemade Valentine from my mom. The baby model is my husband about 26 years ago. Isn’t he a cutie

FYI: Lucy and Charlie Bucket are my mom’s cats. Mal’s parents’ cats, Gatto and Monet, also sent us a Valentine’s Day card. Their card had a cartoon cat with a heart-shaped hairball on it! Those crazy cats! 😉 Isn’t it fun when parents send things from their pets?

Time to catch up with Lost. Night, bloggies!

  1. The bowl looks so cute! I love how it has two little handles. Yay! What a sweet little thank you from Sarah. And that card from your mom is so sweet. Happy Valentine’s Day!!!

  2. Oh wow those tomatoes look great! I’ve been trying to find an alternative to fried green tomatoes and I think this is making the gears turn 🙂

  3. I second the commenter who mentioned Yogi Tea’s Sweet Thai Delight. That’s my hands down favorite. Although, I do like the Mexican Sweet Chili tea too. What a lucky girl! I hope you enjoy them all!!

  4. yay, glad the tea arrived! that mexican chili yogi tea sounds fabulous. i love spicy drinks!
the m&ms fit your valentine’s mug from heather perfectly. something about special-colored m&m always makes me want to eat them more, ahhh!
also, love the use of the on-their-way-out tomatoes — they look delicious. and cute card from mom (and adorable baby mal, aww!)

  5. Wow – I don’t think I’ve ever had oven roasted tomatoes before, can you believe it? I see in the above comments that I’m not alone, so thanks for a great idea for us all!

  6. The Peach detox tea is really good so I bet the berry one will be too. I also really like the Nighttime and Lemon Ginger tea from Yogi (but it’s only for serious ginger lovers).
