What is almond meal/flour?

Almond meal/flour is skinless, blanched almonds that have been finely ground.

What makes it so special?

It adds a moist texture and rich, buttery flavor to baked goods and desserts. It’s also low in carbs and a good source of protein, fiber, vitamin E, and magnesium. One serving (1/4 cup) has 160 calories, 14g fat (1g sat), 3g fiber, and 6g protein.

What made you decide to try it?

The CrossFit cult. Just kidding! Well, sort of.

Our box is starting a Grain-Free Challenge next week, so our coaches are gearing up with The Paleo Diet. I’m not planning to do Paleo, but I’m using aspects of it to clean-up my diet (i.e. more lean protein and healthy fats, less junk, but keeping the whole grains, beans, and dairy). Plus, I like trying new things, so I’m giving a few of the Paleo recipes a whirl. The Grain-Free Challenge also involves fitness and weight loss elements, so I’m participating in those parts. I’ll tell you guys more about it tomorrow!


I broke open my new bag of almond flour to make an Almond Flax Pizza Crust, which I topped with ground beef, peppers, onions, cheese, and marina sauce.

The crust turned out really well””thick, sort of cake-y, and really hearty and satisfying. Those two pieces of pizza sat in my stomach like a rock!

After dinner, I enjoyed a dark chocolate Ghirardelli square.

This morning, I rocked the almond flour once again, but, this time, in the form of pancakes!

In the mix:

  • 1 cup almond flour
  • 1 tbsp ground flaxseed
  • 3 eggs
  • 1/4 tsp vanilla extract
  • Cinnamon to taste

Makes 4 pancakes

I made sure to use every last once of pancake batter because almond flour cost as much as is like gold.

I topped my pancakes with fresh blackberries and maple syrup that the Federation of Quebec Maple Syrup Producers sent me to test out.

Did you know that Quebec is home to more than 7,400 maple businesses, making it a producer of close to 80% of the worldwide maple syrup output? Crazy, right? I had no idea so much maple syrup came from there. Maple syrup also has over 54 antioxidants! I didn’t know that either!

  1. I have a couple of friends who started doing Crossfit and the Paleo diet. They have lost a ton of weight, but I don’t think I could do that strict of a diet all.the.time! I have been wanting to try almond flour though…it’s so expensive 🙁

  2. That pizza looks fantastic! Nothing beats a good home-made pizza! I made my first home-made pizza a few weeks ago, and couldn’t believe how great it was. My hubby even approved(And he is pizza man of the year haha)..those pancakes sound so good right now too! Enjoy the dog park with Murphy and Mal!

  3. Those pancakes look great! It makes sense that people would lose weight on the Paleo diet because it is so restrictive, but I think it would be so hard to adhere to.
    I’m interested in hearing more about your new love of Crossfitting! I want to try it but I don’t think I can afford it on a student’s budget… 🙁

  4. I love almond flour! It’s so versatile!

    I use it in apple crisp/crumble to increase the protein content…1/2 oats and 1/2 almond flour is killer! I also use it in things like crust and batters like you did.

    PS I actually make my own almond flour. I buy blanched, peeled almonds and process them in the food processor and then put them through a mid-grade colander so the big pieces can go back into the processor, but the fine “flour” goes right through. It’s much cheaper than Bob’s!

    I love REAL maple syrup and stopped buying the fake stuff a few years ago – tastes so much better and a little goes a long way!

  6. I like almond flour and, when mixed with chickpea flour and cornstarch in the right ratios, it is a great substitute for wheat flour. Nobody ever realizes that my wheat-free baked goods are actually wheat free until I tell them – and many still don’t believe me.

    But I save money but just making my own almond flour. It’s so cheap and easy that buying it is silly.

  7. Hi Tina – I have an orange-almond cake that I make with almond flour/meal and recently discovered they sell the stuff at Trader Joe’s for pretty cheap. If you get hooked on the stuff, you should definitely hunt it down there!

  8. Have you tried coconut flour yet? I bought a bag of it and sort of don’t know what to do with it, but I know it’s big with the Paleo community.

  9. It really is kind of crossfit cult! Lol. I wish almond flour was not so expensive, because that would make the decision to eat like that regularly so much easier!

  10. The Bob’s almond flour is super pricey but not all almond flours are. Trader Joe’s sells their own almond flour for a fraction of the cost! The only difference is theirs is not made from peeled almonds so it isn’t all white like Bob’s. The taste is the same, your finished product will just be a little darker in color. I haven’t used my almond flour for pizza crust yet, might have to try that out! I love it for pancakes and muffins!

  11. Great post, I have seen almond flour in the store but never knew exactly what it was. It’s cool to see that you can make sweet or salty dishes with it. Do you know if almond flour can replace flour in any recipe, and/or what the conversion number would be? (is one cup flour equivalent to one cup almond flour?)

  12. I’ve never actually bought Almond Flour but I have made my own. I’ve used it in a lot of recipes and no one can tell it’s a different kind of flour.

  13. Thanks for doing this post! I’m currently gearing up to try going Paleo for 30 days and have been considering buying some almond flour. Still trying to justify the price since I am on a budget but I think I’m going to give a shot now.

  14. I love almond flour. Great cookbook you should pick up is the gluten free almond flour cookbook. Such fantastic baked goods and a lot of them are also lower in sugar or use alternative sweetners

  15. While you’re rocking the almond flour, you should really try the cookie recipes from (especially the chocolate chip!) Oh my goodness, they are my favorite cookies ever (and I’m not even gluten free!)!!

  16. I started cooking and baking with almond flour almost ten years ago (time flies!) when I realized I went GF. Although I eat gluten now, for a good 5+ years I was strictly GF and almond flour was my salvation.

  17. I broke out the almond meal last nighttoo! I originally bought it for baking French macarons (sohard to make!) But used it to crust baked tilapia for dinner. Healthy and yummy, but oh soooo pricey!

  18. I miss almonds so much! So tasty, yet sooo upset my stomach. I’ll have to try and make my own flour from some other kind of nut. But it sounds good!

  19. The paleo diet seems too much like Atkins… I don’t like the idea if any diet with strict guidelines like that. It just doesn’t seem balanced enough. I’ll have to try the almond flour. I love baking with new ingredients!
