I’m the owner of Carrots ‘N’ Cake as well as a Certified Nutrition Coach and Functional Diagnostic Nutrition Practitioner (FDN-P). I use macros and functional nutrition to help women find balance within their diets while achieving their body composition goals.


An in-depth, 4-week reverse dieting course for women who feel like their metabolism has slowed down, think they might have hormonal imbalance and can’t lose weight no matter what they do.

The gym was so busy this morning!! I totally forgot about the January Joiners. Luckily, I snagged an elliptical right away and peddled along for 40 minutes without incident. I listened to music and caught up with this month’s Real Simple magazine. It was a nice, little workout.


I ate breakfast much earlier than usual this morning, so, not surprisingly, I was hungry for lunch by 11:00. (Five hours is typically my max between meals.)

As soon as I got home from the gym, I start to make lunch, which came together in about 10 minutes. Love that!

I reheated some honey-roasted root vegetables.

Melted cheddar cheese on half of an Iggy’s roll and sliced up an apple.

I rounded out the meal with a container of Chobani and some water in my Sigg.

So, I’m really starting to enjoy lunch. Breakfast is still my favorite meal of the day, but lunch is working its way up the list.

Now that I’m really trying to plan well-balanced meals, lunch is a lot more fun for me. I guess I never knew what to make, so I didn’t look forward to my second meal of the day. But, now I want to make (and, of course, eat) lunch. Mixing and matching foods (flavors, colors, and textures) is the best part!

  1. I love having lunch right after I work out too. 11-11:30 is when I’ve been eating as well!! I think lunch is my favorite just because it’s simple and usually tasty. I generally incorporate a lot of favorite foods into it!

  2. My favourite meal is definitely breakfast, but only on weekends where I have nowhere to be and can make something delicious. Otherwise, I’m normally scoffing a banana on the train which is not so enjoyable.

  3. I love lunch! It’s probably my favorite. Dinner is my least favorite. I am very much a grazer and will bring a bunch of little things to eat for lunch and eat them throughout the day. That’s why I’m not big on dinner because it’s typically one huge meal. I’ll usually bring 1-2 veggies, 1-2 fruits, some kind of main dish, and a little dessert!

  4. My favorite meal is dinner, mostly because that’s when I’m the most creative (because it’s for hubs too). Unfortunately, dinner is always the worst bloggy pictures because it’s dark. Go figure.

    I haven’t seen the latest issue of Real Simple, looking forward to it. I love that magazine.

  5. I love breakfast just because there are so many breakfast foods I love and they are all really easy. Lunch can be stressful because I have to pack it and dinner is never fun because I’m tired at the end of the day. Yep, breakfast wins by a landslide!

  6. Breakfast is definitely my favorite meal of the day! Do you find it easier reading a magazine on an elliptical rather than a treadmill? I’ve only tried reading on a treadmill and had to give up because it was impossible to try and read anything as I moved around so much!

    Breakfast is my favorite meal of the day– not necessarily in the morning…pretty much all the time! I love breakfast foods…

  8. I’m a breakfast lover, too! I kinda plan it the night before and it really gives me something to look forward to as I hop out of bed! I definitely eat the most at dinner-but I think that’s because i’m home the most time during my day.

  9. Breakfast is deffo my fave 🙂 Followed by dinner.
    Lunch is kinda so-so. I look forward to it because it’s food (always good :P) but it’s usually a packed lunch, and there’s only so many sandwiches and salads I can take…

  10. I like breakfast and dinner but I think dinner is my favorite meal. Lunch is that meal that I can never figure out what I want. It’s really hard trying to figure out what to eat for lunch everyday while at work.

  11. I’m so excited to make the roasted root vegetables…friday afternoon I’m chopping and roasting!

    My fav meal of the day is my oats in the am…i could eat them for bfast/lunch/dinner and snack! I get my protein in by putting a scoop of vanilla whey protein powder then add1.5 cup of water, a 1/2 cup of pumpkin, 2 TBSP of flax seeds and a TBSP of splenda…yummm!!!!!

  12. Oh those January Joiners! I guess I would say dinner is my favorite, although, my lunches usually consist of left over dinners… so can I have two answers? Good luck and the dentist!

  13. I pretty much love all the meals. They are all different, which makes them all fun. I used to really love dinner but nowadays I really love breakfast. And lunch too. So really, I love all the meals.

  14. I love, love, love breakfast. It gets me through the morning and I love how diverse it can be (for me at least). And that’s a big change for me because I used to hardly eat breakfast. And if I did eat, it was usually just boring cereal.

  15. I really love lunch too, but dinner is my favorite. I love dinner because it’s after the baby has gone down for the night and it’s my chance to catch up with my husband (or catch up on our DVR shows!).

  16. ugh, the dentist. i recently moved so i need a new dentist. i’m so sad! until recently i was close enough to home that i could still go to my childhood dentist. i loved him! 🙁 i have an appointment for the end of the month. i hope your visit today goes well!

  17. Oh, definitely dinner! It’s the time I feel most relaxed to eat and I like what I can make then the best. I actually really hate breakfast.
