The gym was so busy this morning!! I totally forgot about the January Joiners. Luckily, I snagged an elliptical right away and peddled along for 40 minutes without incident. I listened to music and caught up with this month’s Real Simple magazine. It was a nice, little workout.

Lunch

I ate breakfast much earlier than usual this morning, so, not surprisingly, I was hungry for lunch by 11:00. (Five hours is typically my max between meals.)

As soon as I got home from the gym, I start to make lunch, which came together in about 10 minutes. Love that!

I reheated some honey-roasted root vegetables.

Melted cheddar cheese on half of an Iggy’s roll and sliced up an apple.

I rounded out the meal with a container of Chobani and some water in my Sigg.

So, I’m really starting to enjoy lunch. Breakfast is still my favorite meal of the day, but lunch is working its way up the list.

Now that I’m really trying to plan well-balanced meals, lunch is a lot more fun for me. I guess I never knew what to make, so I didn’t look forward to my second meal of the day. But, now I want to make (and, of course, eat) lunch. Mixing and matching foods (flavors, colors, and textures) is the best part!

  1. Gah I could never pick a meal! I think breakfast is probably my least favourite now, cos I’m a little bored by it. lunch is my time to experiment with new ideas, and dinner is always a fail-safe favourite, so they’re both awesome 😀
    I have to say, I really, really like the new blog layout! It looks so much more pro, and it makes me smile every time I open up your page 🙂 it screams class!

  2. Lunch is definitely my favorite meal of the day. You can eat any type of food you want – breakfast, dinner, or dessert (or all three) and during the weekdays it is a nice break from work!

  3. I love lunch too! I can never decide whether I like breakfast or lunch more, but dinner is definitely my least favourite meal for some reason.

  4. Tina – I had fallen WAY behind on reading posts, so I’ve spent the last 3-4 days catching up. I just finished this one and was frantically searching for the “next” button, but then I realized I had caught up with real time! 🙂 Just wanted to tell you how much I LOVE CNC! I made my first trip to Whole Foods last night and I love it! You are so inspiring!

  5. I fear the January Joiner stigma! I want to join another gym (mine sucks) but I want to wait until February because I don’t want to look like one of “those” people – ha!

  7. I think I love them all! I always look forward to breakfast after I get home from the gym, and I LOOOOOVE lunchtime at work. Dinner gets me excited too, especially if it’s salmon which I’m a little crazy about at the moment! Hope everything at the dentist went ok. 🙂

  8. It used to be breakfast. I think that now I have to vote for dinner because I enjoy eating with my husband and having the chance to talk about our days without either of us rushing to get out the door.

  9. January at the gym is scary…I’m off to battle the crowds at Healthworks tonight, it hasn’t been too bad in there so far but its still early. Breakfast is my favorite for sure! I love all breakfast foods, especially pancakes and egg sandwiches 🙂
    I was supposed to go to the denstist today too but I cancelled, so bad of me! Hope all went well!

  10. Aw yes….the January Newbies. I was stuck between two last night. The guy to my left was Mr. Too Much Cologne Guy and to my right was Loud Woman Yelling on Cellphone.

    UGH.

  11. I love all meals 🙂 I love cooking, but lunch is probably my least favorite because I usually eat at my desk.

  12. It depends on the day. On the weekend I love breakfast. On Meatless Monday it’s always about dinner, we try something new. During the work week it just depends.

  13. I’ve never really liked lunch probably because there are so many choices of what I could eat. I try to bring my lunch every day to work which is a lot easier than trying to decide where to go. Plus it’s a lot easier to make a healthy lunch than to go out and search for one especially when my stomach is telling me it’s hungry. I think I’ll always be a breakfast lover but usually when lunch rolls around I’m happy that it’s here!

  14. Monday through Friday I pack my breakfast/lunch to-go so my favorite meal is dinner because I have a chances to be a little creative.
    However on weekends my favorite is breakfast because I can make it fresh, instead of packing it the night before. It taste so much better when you get to sit down an enjoy it right away!

    Hope the dentist went well! All the workers at my dentist office know me by name I’ve had to visit them so much- I blame it on genetics!

  15. Favorite meal: Breakfast! I make your French Toast Tofu quite often! It’s delish!

    Your dentist sounds like the psycho I went to as a child. Every time I went I had at least one cavity. Seriously, every time? Sounds like he may have been a little money hungry:)

  16. Breakfast! One reason is because I always eat at home quietly, while sometimes I eat lunch and dinner in a hurry because I’m at work!

  17. Breakfast…definitely breakfast! I have actually been known to eat breakfast foods for every meal of the day…this is actually a very regular occurance. 🙂

  18. Definitely not lunch! I have to pack my lunch and take it to the office, so it’s usually cold and boring. You never know how much time you’ll have to scarf it down.

    Dinner’s my fav. You can make something fresh off the stove and serve it up warm or even enjoy ice cream for dinner right out of the freezer. It’s perfect!

  19. Definately lunch because when I pack a lunch for school I pack the perfect amount. Not too much-not too little. But when I get home is usually my snacking time when I eat to eat.
