What a FUN weekend! I had such a blast hanging out with Anne. It was fANNEtastic!! I was sad to see her leave this afternoon, but we’ll be reunited in just two weeks at the Healthy Living Summit.

In case you missed my weekend posts, here they are all in one place for you. It was an epic weekend!

Snack #1

After I dropped Anne off at the airport, I headed home. Mal and I desperately needed to go grocery shopping, so I made myself a snack to hold me over until lunch. I added some random veggies to leftover Mmmm Sauce. It did the trick.

After lunch, Mal and I planned out our grocery list for the week. Meal planning is always an adventure in our house, especially when we’re low on food, but we managed to stay within $5 of our budget. I’ll take it! (You can read all of my tips and tricks in my Grocery Shopping 101 series.)

Mal and I haven’t been doing much cooking this summer, so we picked out three delicious recipes to make for dinner this week. (We just wing it for the rest of our meals.) I’m looking forward to some good eats!

Snack #2

After grocery shopping, I made myself another snack: Peanut Butter and Banana Smoothie with chia seeds. (I forgot to snap a photo before I drank the whole thing.) Two snacks = one lunch.

Dinner

Mal ended up eating a late lunch, so we decided to do our own thing for dinner tonight. (So much for our meal planning!) I made myself turkey and cheddar cheese sandwich and a salad with crumbled feta and the most amazing balsamic vinegar ever.

Now, I want something sweet to eat. Maybe some Ben & Jerry’s ice cream?

  1. Awww now i’m even sadder i can’t attend HLS, stupid passport renewal delay 😛
I plan out 6 out of 7 dinners a week as i hate having the “i dunno what do you want to eat” fight that happens every night i don’t pre plan 🙂

    1. @Mama Pea: Just bought your book! I loved the “look inside” that was available on Amazon! Lookin forward to reading it!
Tina, I bought yours too! So excited! 3-5 days until they will arrive!

  2. I’ve never done meal planning, I’ve always just decided day of what I’m making for dinner. This results in lots of last minute trips to the grocery store. So, maybe I should give meal planning a try!

  3. I have made meal planning a “must do” for the upcoming school year. My husband and I are both teachers and find it hard to make a healthy dinner at night when we are so tired!

  4. Will your book be available at other bookstores soon?? I went to the Coop and Boarders looking for it but obviously could not find it 🙁 I didn’t realize it was only available on Amazon and Barnes and Noble. I will def buy a copy from either now I know I don’t have to scour random book stores haha

I really like how you and Mal have such a great balance of doing your own thing for meals as well as planning stuff together. My boyfriend and I plan maybe one or two meals a week together. We have different tastes for the most part and our schedules are a little different. It works for us and makes those times we plan and make a meal together that much more special.

Go for the Ben and Jerry’s girl!

  5. I usually do the same thing — plan a few midweek meals and then eat whatever I feel like on the other days. When I try to plan meals for every day of the week, I find something usually gets in the way (last minute plans, etc) and we end up with too much food in the fridge.

  6. I have been trying to lower the amount of money I spend on groceries, but I have no idea how you manage! I’ve read all your blogs about it, but I still probably spend more than you two do, and I’m a single girl living alone! Although I’m sure part of the problem is every week I’m having to buy new kitchen staples (like canola oil or spices) since I’m trying new recipes and am used to a college-style kitchen! (aka bare bones)

  7. It never fails to amaze me how much I like reading about other people’s meal planning and grocery lists. I like knowing I’m not the only one writing out my week and leaving lists all over the place. 🙂

  8. I wish we had more time to make dinner together. We both pretty much eat dinner at the office, so at home, it’s like, is there a snack I can get you? I feel pretty useless in the homemaker department most nights.

  9. I havent been cooking much during the week either! School+work+the fact that it is summer and flipping hot! We either make smoothies and then snack on cashews etc. or quick veggie wraps!

  10. I do a pretty good job with planning, it’s meal execution that I have trouble following through with! I work full time so even when I plan a meal, I don’t always feel like cooking when I get home or the kids are already starving so I cook them something quick and then my husband and I just wing it. Oh well…
I am glad you reminded me to bring my CNC book to HLS, can’t wait to have you sign it!

  11. Glad you had such a nice weekend with Anne! I wish I could attend the HLS this year. I wasn’t quick enough to get a ticket. 🙁

I do the same thing with meal planning. Usually pick a few recipes and then wing the rest.

  12. WEEE!!!! I didn’t even THINK about bringing my copy of your book to sign!! Thanks for the heads up!! It’s totally going to be like the first thing I pack 🙂 🙂
