Cookie Friday Chocolate Chip Cookies

So, you’ve probably seen these cookies on CNC all week long. I’ve actually made two batches now, and they have been appropriately devoured in less than 72 hours.

As you can tell, I really love these cookies. The whole wheat flour makes them thick and hearty, and the sugar, butterscotch extract, and chocolate chips give them the perfect amount of sweetness. Of course, they taste delicious, but the best part is they’re sort of healthy for you. Ok, no cookie is truly healthy, and if it was, you wouldn’t want to eat it! I mean, broccoli cookies? Um, no thanks.

I figured Cookie Friday was the perfect time to share this recipe, so here it is! Enjoy!

Ingredients:

  • 1 cup whole wheat flour
  • 1/4 cup brown sugar
  • 1/4 cup sugar
  • 1 tsp butterscotch (or vanilla) extract
  • 1 tsp baking powder
  • 2 tbsp canola oil
  • 1/3 cup liquid egg whites
  • 1/2 cup chocolate chips

Directions:

  • Preheat oven to 350*F.
  • Combine all ingredients in a large bowl. Mix well until batter is blended evenly.
  • Use a tablespoon to portion cookies and roll batter into a ball before placing it on a greased baking sheet, approximately 1-2 inches apart.
  • Bake cookies for 10-12 minutes.
  • Remove cookies from baking sheet and allow to cool on wire rack.
  • Eat and enjoy!

Makes approximately 18 cookies

  1. Yum, these look awesome! I just made a recipe for whole wheat cookies that had dark chocolate chips, chopped almonds and dried cherries. I agree, no cookie is all that healthy (especially when you eat 5!) but these look pretty dang good in their own right:) Love your blog!

  4. I made these with vanilla extract and real egg whites. The batter was extremely sticky. It was impossible to roll the dough prior to placing on the cookie sheet so I just dropped it on. The dough does not taste good, but the cookies were delicious right out of the oven. I am glad the dough didn’t taste good because I usually eat so much dough that I don’t want the cookies. Thanks for the great recipe.
